Vietnamese Prawns in Tamarind Sauce - Tôm Rang Me
Tamarind is a fruit famous from Asia to Africa for its uniquely fresh taste of both sour and sweet. In Vietnam it's used in a variety of dishes to lend a beautiful contrasting taste to meats and seafood. In America you may find this paste in the Asian or Indian foods section, although more likely canned or in a jar, since few western markets sell fresh tamarind paste in a ball like you see in the video.
Please try this recipe with some beautiful fresh prawns, or experiment with using the sauce to liven up your other dishes, from pork to beef to chicken to vegetarian!
