Canh Chua Cá - Vietnamese Sweet & Sour Fish Soup | Helen's Recipes

For the ingredients you will need
4 catfish steaks (500g/1.1lb)
salt, pepper, chili powder and chicken stock to taste
2 tbsp vegetable oil
2 tbsp garlic, minced
1 small tomato, diced (optional)
1.5 liters (6 cups) water
2 tbsp (50g/2oz) tamarind pulp + 250ml (1 cup) water
4 tbsp sugar
4 tbsp fish sauce
1/4 pineapple, thinly sliced (1 cup amount)
1-2 medium tomatoes, cut into wedges (1 cup)
6 lady's fingers (okra), thinly sliced on the diagonal (1 cup)
1 elephant ear stem, thinly sliced on the diagonal (1 cup)
50g (2 oz) beansprouts (1 cup)
1 bunch rice paddy herbs, chopped (1/2 cup amount)
1-2 sprigs sawtooth herb, chopped (optional)
2 spring onions, chopped (optional)
salt, sugar, chicken stock, fish sauce to taste
red chili pepper, sliced

    I have searched all over the web for recipes for Vietnamese food. You have provided the best options I can find and a great way to learn pronunciations as well as a wide variety of Vietnamese food that one may not find in a restaurant. I love what you are doing and hope that you one day can be seen on TV!

    Canh chua ca kho to yummm , I am so glad she add the fried garlic at the end, I make mine oily garlic so it sizzles on top of the soup. Although no one asked me, I use less sugar water and add 100% pineapple juice.

    When I made this I used catfish heads instead catfish steaks. It turned out to be delicious and made me want to learn more about Vietnamese food and cooking methods. I'm in love with Vietnamese food.

    Thank you for the recipe! Hubby said it tasted better than his mom’s canh chua and that says a lot! The fried garlic at the end was what enhanced the flavor as well!!!

    Your Great Helen. You blow me away how well you cook so many dishes and they are all excellent and your so young. You cook like a pro. I fell in luv with Tamarind and fish years ago and every time I see fish prepared this way my mouth starts to water. You make cooking look easy and I love hearing you describe what your doing.     The fresh pineapples are also my favorite in the soup. I always try to get to them first. LOL! Helen has a bun rhieu recipe up on her channel. I forget if it's done in Vietnamese with English subtitles or not, though. I think it is, but it's doable if you don't understand Vietnamese since you can print up the recipe and just follow along with what she's doing in the video. :)

    For me, I usually have standard pantry items on hand like garlic and shallots. Everything else at my Asian supermarket costs around $2 except the fish. Overall around $25 for the first batch. I always end up with way too much extra vegetables/fruits, enough for 1-2 more batches, so this lowers the cost of the recipe to just $15 to account for the need to buy more fish. I cook with salmon, which is more expensive than catfish. I'd say overall it's 1/3 the cost of restaurant takeout.

    Very good recipe, however, when preparing it My wife and I did two modifications: we use wild caught salmon instead of the cat fish and we use fresh lime juice instead of the tamarin paste. The result was also very nice. Hope it does not change much the traditional scope of the dish.

    My husband loves Canh Chua Thai, is this the same way to cook that? I grew up eating Canh Chua on the sour side, he grew up eating it much sweeter. Thank you for sharing! You've taught me how to cook like my mom used to :)
