Vietnamese Sweet and Sour Soup / Sour Soup with Fish (Canh Chua Ca)

Ingredients:
1 lb swai fillet (or any fish of your choice)
1 Tbsp fish sauce
1/8 tsp ground black pepper
4 garlic cloves
1 Tbsp vegetable oil
6 oz okra
8 oz pineapple chunks
2 small tomatoes
4 oz elephant ear steam
6 oz bean sprouts
6-8 sprigs rice paddy herb
6-8 sprigs sawtooth herb
6 cups chicken stock • Chicken Stock (Nuoc Su...
1 Tbsp sugar
2 Tbsp fish sauce
1/8 tsp ground black pepper
3 oz wet tamarind
1 cup hot water
Yields: 6-8 servings

    Really great recipe, Trang! I like how to added all the elements that could possibly go into this soup. A lot of people only add pineapple or okra or elephant ears, but you added all three. And you added both the rice paddy herb and the sawtooth herb. All of those ingredients together would be a beautiful culinary symphony, for sure. :)

    Hi DG, you are most observant! I asked several people how they made their soup and everyone used a different combination of vegetables. Sometimes it's difficult to get all the ingredients without making a special trip to the Viet grocery store and that's when I have to get creative with substitutions.     WOW, I am so excited to discover this video because I am a huge fan of Asian cuisine and more importantly have eaten a variation of this soup in Cambodia for years and guess what.. they call it Vietnamese Fish soup "somlah machu yuan". I suspect that it was shared years ago and I am so curious as to the origin and its survival in Cambodia despite periods of animosity between the two neighbors. I make it at home often, it differs slightly, no black pepper, bean sprouts or okra. This is the epitome of healthy home cooking. You can't imagine how excited I was the first time I saw the rice paddy herb growing in a rice paddy in Cambodia. One day I will surely visit Vietnam too. All the best from Kevin in Montreal.

    RunAwayRice Since I have never eaten Vietnamese Food in Vietnam or in the west prepared in a Vietnamese home, I will defer to your expertise about similarities, but I am familiar with the cuisines of Cambodia, Thailand, Laos and those 2 tiny countries China and India hehe. Cambodia is all about Kreung paste for flavour. I am sure there are many shared foods because of travel between countries in the region and also immigration. Oh, they also call this soup Vietnamese Sour Soup. I have a question for you if I may.... do you know of any other recipe where the subtle and unique rice paddy herb is used in cooking? I find it is critical to this particular recipe and I am not aware of other recipes where it is used in Cambodia. Thanks again and looking forward to more cooking videos.

    I think in the traditional Vietnamese way, you should crush the elephant ears with your finger under water and salt, after that squeeze out all the excess water and drain it under cool water again. And wear a glove while cooking with elephant ears, they itch!!! :)

    Hi Hannah, good info--I have really sensitive skin but have not had any problems handling the elephant ear stems. Perhaps it's the crushing of the stem that releases the itch-causing substance. Thanks for sharing :)
