Vietnamese Mochi in Ginger - Chè trôi nước

This is an example of a favorite dessert in Asia, and one that is relatively unknown in the western world. Many people have heard of the Japanese version of Mochi, or maybe have purchased ice cream Mochi in their supermarket. But this mochi is different in that it is much less sugary than the westernized versions, and focuses more on the fresh flavors of mung bean and ginger.
With an outer coating of rice flour and inner filling of mung bean, this dessert qualifies as vegan, gluten-free and pretty low sugar for a dessert. Made fresh, it provides a lovely mix of tastes and textures, from the silky coating of rice flour dough to the grainy interior mung bean paste. The mochi floats in a very light syrup of ginger, and with optional sesame seeds and coconut milk you can add more sweetness and texture as you desire. All of this is incredibly delicious and immediately enjoyable to even the most die-hard western palate!

    This is my favorite che to eat in the cold winter months. Love it! But I would add coconut cream to mine before serving. :) Coconut milk/cream makes everything better. LOL
