Vietnamese Fresh Spring Rolls That Anyone Can Make (2 Ways)
Тәжірибелік нұсқаулар және стиль
Homemade fresh spring rolls (also called summer rolls) are super easy to make and require very little "cooking". It's more of like an assembly than anything else. Sort of like a less stressful burrito.

Coming from a Vietnamese person, here's a few tips that can make your life even easier when making spring rolls: 1. You don't have to julienne the carrots if you really don't want to, just cut them into thin strips however you like 2. If you're too lazy to make homemade fried shallots, then the Asian store usually has precut and dehydrated fried shallots. It's like $3 for a bag and all you have to do is drop them into oil for a few minutes 3. For the rice paper, get the Three Ladies brand. Best. 4. If you can't make the peanut sauce for whatever reason, then fish sauce would be good with this too 5. The traditional version of spring rolls with shrimp is the best version imo but you can honestly put whatever you want into them. Spring rolls ain't fussy

@@robertbeining141 Very simple to make. Prepping all the ingredients usually don't take too long (30 min depending on what ingredients you are using). These tips are really good for making the best Vietnamese spring rolls you could make at home in your own way. I really love the Three Ladies Brand and I definitely recommend that brand as well. Vietnamese here: 1. These fresh rolls consist of a meat and raw veg in a rice paper wrapping and dipped in a sauce. Very versatile, just don't make the ingredients too spiced/flavored, the main purpose is the freshness, juiciness and the tenderness of the ingredients that will crunch and burst when bitten into, combined with the sauce it's just divine. For example I usually have them with fresh lettuce, some herbs like shiso, cilantro, culantro, mint, basil, etc. with small pineapple, cucumber and carrot matchsticks, and boiled sliced pork, shrimp, or thinly sliced fried eggs. 2. Don't ever soak the rice paper in water for so long. Never. It's worse when you make the fried version when the filling is raw, but the problem still exists. It's going to break down and tear and go mushy when you roll (I speak from experience). Take a bit of water just to smother around the rice paper on both sides and that's it. 3. A light, sweet and sour fish sauce version also exists. Just combine fish sauce, sugar, lime juice, minced chili and garlic, and dissolve with water until it reaches a light amber color. Adjust to your own taste. The fish sauce will provide a very interesting taste when dissolved, slightly sweet and savory. Do wash your hands after handling fish sauce bottle, you don't want any of that on your clothes, it'll take 9 weeks of suffering to wash off. 4. You can just serve a platter of ingredients, then roll with everyone at the table, it's more fun that way and you can adjust portions. Small rolls look nicer, and are more unlikely to break, but has less filling. You should adjust bit by bit until you see the optimal amount to put in. Laying down a lettuce leaf before filling helps with keeping the structure of the roll. Cutting the herbs too small can make them fall out very easily if the roll is not tight enough, and doesn't provide that crunch. 5. Just experiment, these are just some general guidelines. I hope you enjoy Vietnamese food

You don't have to submerge the rice paper until it gets soft because depending on the rice paper, it will get ripped easily. Just pass it through water quickly, making sure that it is wet, put it on a work surface, put the filling on while the rice paper is softening, and you can roll. If you have a ripping rice paper problem, you can wet just one side of the rice paper with your hand. The wait time for the rice paper to soften maybe a tad bit longer, but it will help for the rice paper to hold up better when rolling. Tips update: back with a new tip! Honestly, your best bet is using cold water. It helps the rice paper to remain chewy without having to worry about wetting only one side.

This is one of my favorite foods of all time. They're so simple, but so tasty. If you're not a fan of shrimp or SPAM, you can use tofu. How do you these rolls from sticking and tearing when you make them?? thanks!! x
Vietnamese here :D This is really close to the authentic rolls you can get in Vietnam, well done :D By the way, there are some things I want to clarify: - Nước chấm means dipping sauce, so basically you were saying "dipping sauce dressing" :D no worries, I know what you mean :D For those who don't know, below is some ways we Vietnamese call the dipping/dressing sauces: - Nước mắm = fish sauce. We also use this word to refer to all sort of dipping/dressing sauce that made with fish sauce, or just plain fish sauce by itself. Used for dipping, dressing, seasoning in general - Nước mắm tỏi ớt = fish sauce with garlic and chili. It can refer to plain fish sauce with garlic and chili (usually for dipping steamed food), or diluted and sweetened fish sauce with garlic and chili (the one shown in this video, for dipping and dressing) - Nước mắm gừng/me = same as the one above, with the addition of chopped ginger or tamarind paste, goes great with some certain food (especially fried fish) I hope the information is useful :D The Vietnamese language can get confusing sometimes, even for the natives :D
I literally love this guy😭😭
That sauce is so good and so easy to make!!! Thank you Josh!!!
I make this recipe all the time and the sauce I always make is a mix of mayo, sriracha, and a touch of teriyaki sauce (soy sauce works decently as well). I would really recommend trying it out!

In Australia Spring rolls are the small deep fried ones, what you made we call rice paper rolls.
The peanut sauce with hoisin is really good and sweet, but when I was in Vietnam some of the peanut sauce was peanut butter, pork liver, and garlic based. It’s soooooooo good. I’ve tried to do a hybrid of the two and it’s my fave peanut sauce.
thank you for the recipe so great and delicious thank you so much
my friends family is from vietnam and they always have me over when they make spring rolls :) its so fun!
a mango thai salad or some pickled julienned daikon/carrot might have added another level of umami-ness to the rolls. Also, the rice vermicelli, feel free to trim them down into smaller strands, sometimes it makes it easier to distribute when planning the filling for a roll. Another tip is to use a clean tea towel to rest the hydrated rice paper. I've done combos like mango cashew avocado along with the shredded fresh salad veggies which were also interesting for different textures. It pretty much is a gluten free medium to make a sandwich wrap if you think about it.
Heck yeah fried crispy shallots. I guess it's time to *roll* on out of here and *spring* into action!

My Vietnamese coworker gave my a spring roll yesterday but hers had shrimp and beef and mint. I almost cried at how delicious it was. It was my first time eating one. The sauce was amazing too!!
Love spring rolls. I need to make them more often.
So happy to see Spam getting reverence from someone like Josh

The chaotic energy emanating from this video is amazing
Me: "damn I watched all Josh's videos already ... now what?" Josh: uploads more gold just as I got sad and bored. You're so cool dude, I can see myself being friends with you!

I made these tonight. Some parts were quite irritating. Here's what I learned for a smoother experience next time: 1) If you dip your rice paper in the water, and the edges curl up, your water is too hot. It should be akin to a warm bath. When it is the correct temperature, you can easily pull up your rice paper with two hands, and lay it flat on a surface (I used my cutting board). 2) Don't overstuff your roll. Put less than you think it needs. Maybe a 1/4 c of noodles (or, even less than that!). 3) When you fold the sides in first, try to crease them on the edges. If you can get them to stick to themselves on the edges, then they roll up easier. Also, roll them tightly, the way you see Chipotle workers in action. You really need all edges to come in contact with other portions of the rice paper to get a permanent seal. If you roll it and veggies are squirting out the top or bottom, just push them back in pinch it shut. 4) Be sure to julienne your veggies, not dice. Diced veggies fall out uncontrollably. 5) Take a BITE. If you just grasp the roll with your teeth, and pull with your hand, the roll tears apart.

You don't need to warm the water at all when you dip the rice paper to wet it.
I actually have NEVER tried to make spring rolls ~ I can't wait to give it a shot and experiment with my favorite ingredients!
I need this now.
