    This is so much creative! As a Vietnamese cooking girl, I use rice paper my whole life just for nem and fresh spring roll. Have never thought it can be cooked many more clever ways like this. Love the salmon roll and the chocolate coconut roll.

    Just in case any curious about the pattern on the rice paper: it is the pattern of bamboo mesh. Rice paper is a tradditional Vietnam Food. In the past, it is dried under sunshine on bamboo mesh. That is where it get the pattern. Nowaday, we still keep that pattern even it was mass-produced

    Thank you for all the awesome ideas using rice paper! After I made a few of yours, I tried out an idea of my own. I filled rice paper wrappers with a blend of shredded mozzarella cheese, ricotta, cooked spinach and finely diced Shiitaki mushrooms, then pan-fried them in avocado oil. They were wonderful! Thanks for inspiring me to try out new ideas with rice paper!😃

    @@lilistheresia6174 , yup, I agree with this. In India as well, rice crackers are a commonly sold cheap snack in trains and buses. I'm not a huge fan of fried rice paper either. I'd rather have potato, gram flour or, prawn crackers any day over rice crackers. The other dishes though, absolutely rock!🤘😍🤤

    I used your idea for the salmon but with tuna steaks! I used enoki mushrooms, red cabbage, chilli, cilantro, mint, basil, and a blood orange sesame glaze I made. I also tried steaming one in kombu. Thank you for the inspiration!

    I really enjoyed them. Fun to make, too! 2 things: 1. I found it tricky to keep the oil temperature just right. 2. Cooking with flavored oils can have a big effect. I cooked mine in canola oil and it brought a lot of that canola flavor to the crackers.

    I made the rice chips and seasoned them with nutritional yeast and I love them! I always have them on hand and can now replace my constant chip cravings with them. And my kiddos will love them too. Thank you!

    I love to make ebi sunomono salad as well as spring and salad rolls (3 of the fastest and easiest lunch/snacks ever) so I usually have rice paper and rice noodles on hand, but I never knew there was SO many other things you could make with them, especially desserts...until now. Thanks to your love of food experimenting/food hacks and a joie de vivre personality both of which we seemingly share (must be the French in us...lol), I have already watched part 2, have since subscribed, and I can't wait to check out all your videos.

If you think of it, many gourmet dishes came from humans being creative what little they had, people started liking it and eventually the big honchos eventually tried it not realizing the lowly roots from where it came. 😉

    Wow! Those rice paper crisps remind me of a South East Asian snack called 'keropok'. It's just flour and some other ingredients mixed with fish and fried. They look almost exactly like those crisps!

    @@FrenchGuyCooking in Indonesia we have "kerupuk", it is fried crisps of many kinds and flavor. The flour could be rice flour, tapioca, corn or mixed. Flavors could be shrimp, garlic, etc. Some are sold fried, but households usually fry them in a batch and put in large containers to be eaten as side dish or as snacks.

    Gosh, I think I actually still have some of these things in my cupboards! Tip: to dampen rice paper: use a spray bottle of water that has a fine mist. :)

    One more recipe you could have added: baklava! It's the only way to do that recipe gluten free, to use rice paper instead. Let me know if you'd like the traditional Greek baklava recipe from Epirus, Greece (I'm from there).

Who cares who made it up first, so many countries have similar recipes, it's not a shocker that some are gonna alter another countries recipe to make it their own style.     That crunchy delicious sound of the fried rice paper reminded me of that of Vietnamese sandwich, which makes feel so hungry. Best of all, the rice paper sushi is absolutely creative! It looks fantastically delicious.

    That translucent rice paper sushi with the leaves is so beautiful! *_* Ah, the potential it has! One could use a criss-crossing pattern of mizuna and rocket, edible flower petals or just colorful vegetables. It could really be a highlight or show-off piece on a sushi platter.

    This is amazing!! I love eating spring rolls mostly because I LOVE THOSE RICE PAPERS!😋 they feel so light and love the clean taste, and its texture, this video was helpful!

    Well aren't you a smarty pants...Thanks for the inspiration. Loved the steamed salmon idea on this video and the fried chicken on part 2. I think I might combine the two concepts and make gluten free mini beef wellingtons for xmas. Of course, I will have to test that out before then! Bravo, Alex, Bravo!

    Alright, the sushi wrap has changed my life. I've never cared for most sushi because I do not enjoy the flavor of nori...I know right...but this worked excellent for me. Much love to you Alex

    we took half of a slow smoked chicken (de-boned and chopped), mixed in a block of cream cheese and stuffed seeded jalapeño halves, rolled in rice paper and deep fried. amazing

    Those rice paper chips are the perfect thing for those Sundays when you want something to snack on but forgot to buy potato chips and have nothing else in the house. :D

    I’m living for just rice paper spring rolls with peanut sauce mixed with chili sauce. These other rice paper ideas are brilliant especially the salmon.

    I'm going to do the steamed fish idea and then I'm going to fry it at the last minute and a nice hot pan of oil, hopefully that will crunch up the rice paper and make it a nice and crunchy salmon roll.. We will see....
