I think I would enjoy guanciale with anything but pasta. I made carbonara with it and the funky salami flavor just doesn't do it for me in pasta

Ragu is any sauce with meat (usually slow cooked) in it. There’s ragu napolitano, genovese, bolognese, etc. That’s all.

Feel like food KZreadrs make way too big a deal about traditional foods. If something exists today, then it exists. Carbonara with cream is a thing-get over the pedantry and just make tasty food that people can recreate.

This was a wonderful video. I think it showed Alex at his best with individual cooking techniques he knew how to do, but by applying them on a whole salmon like this, he reminded me to appreciate and use the whole animal. And, who doesn’t want to try to make gravlax now?

Alex, I am sorry to have to add to the negative comments. You have done very well in your older videos, which is why I subscribed. In the last 3 years, you have produced about 2 videos a year that I enjoy watching. At the beginning of your channel, you released a good video about every week. You were much lower budget and more creative then, which is why I enjoyed them. Now you seem to be going posh and dining out where I don't think I will ever go to. Also some of your series seem to end abruptly, without a conclusion or takeaway on what you learned. I understand that you may be exhausted and don't have the same drive you did a few years ago. If you want to keep subscribers like me, herr are some suggestions. Make a few more episodes to complete the croissant, ramen and Mother sauce series. Travel to the tropics and harvest cocoa beans and finish your chocolate series. Do more improvising cooking similar to your lock down potatoes and ramen. Also outdoor cooking in the mountains. I know you can't please everyone, but if you want your channel to stop going downhill, ask us what we want too see!
