Vietnamese Caramelized Ribs in Lime Sauce - Sườn xào chua ngọt

Vietnamese ribs are made to be cooked with local ingredients over a small wood fire, but you can enjoy them in your home on the stovetop. The flavors of caramelized shallots, tangy lime juice and seared pork combine to create a dish that will have people fighting for the last bite!
The ribs are traditionally cut short in order to eat in a bowl of rice, and to allow the meat to come off the bone much easier. Vietnamese ribs are also usually trimmed with a bit less fat than many American rib recipies call for, since they don't spend a long time over a fire.
