Northern Vietnamese Rib Noodle Soup

This rib noodle soup is one among several Northern Vietnamese dishes that are perfect for both the steaming summer heat and chilly and rainy weather. It’s quite labor-intensive, but it’s so worth it. The broth is so rich from simmered bones and mashed tomatoes; the ribs are tender and well-marinated, and crunchy taro shoots and fragrant herbs are the “cherry on top”.

    Thank you! This is my favorite Northern style soup but they don't serve it in restaurants here in the south so I have to cook it myself. It's quite labor-intensive but really worth it!

    Such a delicious looking recipe. I always loved eating the version made with the greens over rice but this is the first time I've seen this version that is served over noodles. Just curious, what can you replace the taro shoots with? I know the fish soup version uses elephant ear stems, would that be similar?

    This dish is quite popular in Hanoi but I rarely see it else where in Vietnam. I guess that's probably why people are not quite familiar with it. Actually I had never heard of elephant ear stems before but I googled it and it turned out to be another name for taro shoots :D

    Ahh...I thought it looked familiar when you were peeling it. Typically the elephant ear plant's stems I've seen have been a lot bigger than the one you used in the soup that's why I didn't think it was the same plant, but it did look familiar. My sister-in-law grew up in the North and grows elephant ear plant in her garden to use in soups. I'll have to ask her if she's familiar with your version of the rib soup served over vermicelli. Thanks for sharing your recipe as it does look delicious!
