Yes you can use it alone, some people actually do it like that. I like combining the two flours because of the texture. Gram flour will give it a crispy almost coarse texture while all purpose flour is smooth.

most of your recipes are like Indian recipes.the word Kadai you used in the beginning is Indian word for pan

+rekha pydala Hi, that is true, this is a dish that is very common at the coastal region of Kenya and most of the food there has got a very strong Indian and Arabic influence. I am actually calling the pan karai, which sounds very similar to kadai. Thank you for your comment. 😀

I am here to guilt trip you. *With a smile on my face* This afternoon I was standing in my kitchen wondering what to cook for dinner. Then the thought 'Jikonimagic's Viazi vya Karai' came to my head. The thought was quickly followed by 'Ukwaju' So I quickly dashed to check if you had uploaded the ukwaju recipe. :-( Sadly, nothing yet. I know life gets busy , editing and uploading is hard work but in my head, I am not making the viazi until I also have the ukwaju recipe. Well.....I ended up making baked potatoes, tuna and a salad for dinner. It is now 2.30am and I am wide awake stalking your page. Shame on me! I better go to sleep. Am up in 3hours.
