    Aroma of Zanzibar i first learnt to cook kaimati from your page i'm also on this page to learn a different technique and see which one is the best..though for this one i like the way she mix them in the sugar coz it appears with white sugar

    Thank you my dear, I love the way umechambua hizi recipe mbili na ukaamua unapenda kipi zaidi ya kingine kwa zote. Sasa what you do after that is combine the best of these recipes and come up with something that you like. That's what I always do. Compare recipes, pick stuff from all of them and then come up with something that totally suits my taste. All the best!! Aroma of Zanzibar is a gem, I also love her cooking very much.

    I like the way u put the mix kwa mfukoo..I didn't know it was that easy to make the round shape.Am using a spoon to do,but as from today will use the mfuko,I found it much easier.Thanks jikoni magic

    The sogginess is almost unavoidable because the sugar in this case will act hygroscopically. After a few hours of free standing the sogginess inevitably sets in. Personally, I normally don't make so many, at one go, because of this fact although the kids don't mind the sogginess all they know is that they are kaimatis and they taste good whichever way.

    In this instance, yes. This is to allow the sugar syrup to dry and crystalize on the kaimatis.

    +Kivuva Elizabeth Hi, thank you for the feedback. No, you do not have to blanch the french beans. I only do it because it helps the green colour to stay bright. You could just cook them as you go. It will take slightly longer but the results will still be the same.

    Yes, absolutel, that is a good option. Almond milk can also work. Some people just use plain water and it works, only downside is that it won't be as rich...

    It's unflavored (natural / plain) yoghurt. You could also use mala.

    If you are referring to a brand name, yes any will do.As long as it's the thick variety and unsweetened. Maziwa mala will do very nicely here as well.

    I tried them and my sugar didn't coat the kaimati at all, is it cause I put too much water maybe?

    This is because you did not let the syrup evaporate and thicken up before adding the kaimatis in it. Be patient and let it go to the point where it bubbles furiously and you'll be set. Hope this helps, in case of any more difficulties I'll be glad to help. I want your kaimatis to slay!!

    hello dear,i tried the recipe but was disappointed at the end.When I was coating them sugar, my kaimati difilated, was it that the sugar hadn't evaporated well? where did I go wrong?

    Hi, I honestly don't know why they would deflate if they came out puffy. This has never happened to me. I will ask around and if I find an answer I will let you know.

    you didn't allow the kaimati to cool down, hot sugar plus hot kaimati will make them deflate

    Thanks I didn't know that. I always just take my kaimatis out of the oil and into the sugar. Maybe I've just been lucky so far, lol.

    I know what you mean about the sugar. I totally get you. What you could do is add slightly more sugar to the dough because otherwise the kaimatis will be very flat without the sugar from the syrup.

    They are normally on the sweet side, that's why the dough itself doesn't have lots of sugar in it. I am working on the other kind of kaimati that is fleshier on the inside, the one that is normally found in the kiosks. Once I perfect the recipe I will upload it.

    Hi, thanks for trying it out. There is nothing you did wrong. They will be crunchy while hot but as they cool down they will soften. I discovered this accidentally because in my house they have a tendency to disappear as soon as they are done, hahaa. So I always thought they are meant to be forever crunchy until a certain day we had some few pieces that were left over and they softened. Personally, I prefer them crunchy.

    Ooh now I get what you mean, mine are normally crunchy as opposed to crispy. I would not say that it's the mala because some people use water only. Maybe you could make the balls slightly bigger and your batter slightly thicker. If the batter is on the thin side then you'll end up with crispy kaimatis. But I have to say that if you are looking to get the ones with a mandazi texture it cannot happen with this kind of batter. It has to be much thicker than this. Hope this helps, if you need more clarification I am more than willing to answer your questions.

    Sorry to hear that. Well, mine were cooked and continue t to be cooked through on the inside. Maybe you could check on your other parameters, like maybe the size of the kaimati. If it's too big then possibility of the inside cooking are low, or just simply reduce on the amount of yoghurt ....
