This is how my mum makes yam roast from my childhood especially for me because I like it a lot❤ . A slight difference is she doesn't add tamarind.

Mr Venkatesh's dishes are awesome. Though I am a non vegetarian I love his dishes. He speaks about acidity caused by some dishes and water being an antidote. I have found hi ph water being excellent for this. These waters are easily available in the US and do carry ph values. Bon appetit!
