Untold story behind of Lapin Noir | Pioneer bakery in Japan of making bread from natural leavens

Ойын-сауық

This year (2019) marks the 20th anniversary of the opening of Lapin Noir blackrabbit sourdough bread bakery located in Chichibu City, Saitama Prefecture.
The bakery is a pioneer and long-established sourdough bread bakery, using various kinds of home-grown natural yeast to produce and sell more than 60 kinds of bread, from hard breads such as French bread and champagne to croissants and pastries.
Takao, the owner of the bakery, and his partner, Mio, continue to run the bakery and continue to make bread as artisans.
The young Takao met Mio in his travels to Amami Oshima, where he was living together in a local village to oppose the development of the remote Amami islands.
Takao joined the community life, fell in love with Mio, and they eventually became together.
They cultivate fields, raise chickens and goats, and go fishing to catch fish. Life in the community is based on self-sufficiency. In this environment, they began to bake bread for their own consumption, and Takao became absorbed in the fun of it.
Life on the island is simple and uncomplicated. However, such a peaceful life did not last long.
A group that wants to develop the island hires a right-wing organization, and the movement to evict the community becomes increasingly violent. Finally, the shocking consequences hit Takao and his friends...
This documentary tells the secret story of the birth of "Lapin Noir Black Rabbit," which has never been told to the public, along with the behind-the-scenes process of making natural yeast bread.

The baker's work is very noble. The acoustic guitar sounds like "Toril Ayacuchano" of the master Raul Garcia Zarate.

Came here from the video with オぷスト (hope I got that right) and noticed that they were at 27:03. Are the two bakeries related? Also, it's so mind-blowing and inspiring what the bakery owners survived through! Thank you again for the video :)

Beautiful documentary! It sickens me and I get so mad when I think of what he went through being run over with a dump truck while trying to protect his home ! That truck ramming their home could have killed a whole family, children included! All because some greedy evil corporations were willing to physically assault, destroy private property, and commit murder to push their own agenda! Absolutely evil!!
