KUSHTIA, BANGLADESH - Welcome to Kushtia, a beautiful town in the Khulna Division of Bangladesh. Today we’re visiting a local village outside of the city in the countryside where the amazing family will prepare a full Bangladeshi meal and we’ll also have the chance to see them make a special dessert called malai kulfi.
When we arrived to the village they had already started cooking a few dishes. They prepared a local beef curry and a local chicken curry using garlic and ginger paste and lots of cumin and mustard oil. They also made a variety of vorta or bhorta - which is almost any combination of ingredients smashed together to create incredible flavor. They made a roasted eggplant vorta and an egg vorta.
Lunch was a massive spread of local Bangladeshi food, the beef and chicken curry, all the varieties of vorta, fried eggplant, a number of vegetables, crispy caramelized bitter melon, and dal. It was a spectacular meal.
After we finished eating, we had the special opportunity to see the entire malai kulfi process. Many of the families in this village have cows and they make malai kulfi to sell it in the market. They first boil the fresh milk for 12 hours until the cream separates - it’s the thickest milk skin you’ll ever see - almost like cheese. It’s then mixed with cardamom and sugar.
Rasif and Anik sell the kulfi from this village under the name Coolfie Wala (ghortheke.com/Coolfiewalas-Ma..., it’s very cool that they are supporting this family and village through distributing kulfi throughout Bangladesh.

    As a bengali from Sylhet District that went Bangladesh many times to visit my parents village I use to end up mostly in these huts with the local villagers talking to them and loved the happy energy they would exude, honestly gives me so much joy to watch this and makes me want to turn my dad empty villa into a haven especially during monsoon we have the best views of the bany-our.

    I asked a Bangladeshi who is working almost 8 years here in Malaysia. What is his favourite food that he really missed but can only find back in his village. He said ‘Kulfi’ and I asked him again what it is. He said ‘Kulfi’ is very sweet and made from only milk and sugar. He explained to me from boiling the milk until the end but I still cannot imagine it. In my head is just maybe ‘Kulfi’ is sort of cheese but sweet. Now after watching this, I’m totally understand what he said. Thank you Mark!

    That kitchen tool is called Boti. You may have heard a kind of kebab called Boti-kebab popular in Bangladesh, India and Pakistani cuisine. That kebab usually cut into pieces by this tool. In Bangladesh almost everyone, in every household it's used as main cutting tool in the kitchen instead of knife.

    The Bangladeshi food is known to be the best food on the planet. There are some very serious cooking processes and it’s well known in Eastern part of India .     One of the greatest hidden secrets of world cuisine is Bangladeshi food. While it could have similarities with what is now known as “Indian food”, it is, in fact, very very distinctive with its own character and style. I was first introduced to it in 1995 and have continued to be amazed by it over the years. I am not Bangladeshi so I have had to hone my cooking skills in order to make some of these dishes. I do want to point out that West Bengali (Indian) food is NOT THE SAME as Bangladeshi food. How lucky you are to be visiting and eating authentic food!!!!

    Yeah, you are right. I am a Bangladeshi. However I do want to say that, though Bangladesh and west Bengal are very different in terms of some food, there are a lot of similarities too. In fact, west Bengal foods are more similar to Bangladeshi foods than Indian foods. Because West Bengali people and Bangladeshi Bengali people belong to the same ethnicity. Even 70 years ago the Bengal was undivided and during partition, a lot of people migrated there and some people from wes bengal shifted here. Almost 60% or more bengalies of West Bengal have their roots in Bangladesh.

    Currently, I'm living in Malaysia, and because of Covid and other issues, I haven't been able to go to Bangladesh. I got really emotional watching this video. And you did try out Haleem!!     Mark I’m crying you went to my motherland and then you went near a village where my father’s family is from. I grew up on this food. I’m so touched you visited and enjoyed the food. I myself have a hard time in Bangladesh and feel bad that I can’t visit often.     I feel like one of the best parts of being Mark's wife, she doesn't have to ever cook. She gets to learn qbout so many amazing cultures, traveling, helping Mark filming. It would be amazing not to have to cook 3 meals a day and get to try millions of different foods. 😋

    Nothing, mark my word absolutely nothing can beat the traditional rural food from any part of the world. That’s the root system of the food evolution and can hit the taste buds rightfully so. It’s a blessing to be able to experience the country side ambience, surrounded by nature and eating the traditionally cooked delicious food without tampering of ingredients or any preservatives needed.     This was such a wholesome food vlog of traditional rural Bangladeshi food. Village dishes are so fresh, organic and tasty.
