A few years ago, I didn't care that much for egg fried rice. But now, after years of watching your videos, I have purchased a rice cooker, a wok and always make extra rice so there is some leftover for next day egg fried rice. I love taste of Sambal and Galangal and never go without it in my pantry. Recently, I made egg fried rice for an Asian friend who was so blown away by how authentic it was. Thank you, Uncle Roger! Not all heroes wear capes.

Ha something similar happened to me. I made an egg friend rice based off a few of Uncle Rogers hot takes on the dish and low and behold it was goddamn amazing. I don't always have the right ingredients on hand, but I always have day old rice from the rice cooker on hand.

Haiyaa and fuiyoo are 2 words that mostly said by Malaysians ever since long time a go. I am Malay who doesnt speak Mandarin or Cantonese or Hokkien but since little when we always interact with Chinese people the words always come out naturally. 😂😂

@@Annon100 fuiyoo in malaysia is use when we see something impressing like a expensive car or something example " fuiyoohh ... nice car... is it ferrari right?" and as for haiya is when we use to show a feeling of disappointment just like "haiya...why you so dumb dumb"
As an Asian who got bestowed the family's sacred wok from my mother.... i can relate. It's not just a wok, it's your trophy of approval that your cooking pass the family standarization test. Took longer than my diploma and master combined to get the sacred wok. 👍👍👍👍👍

Amazing how when I heard the word "blatjang" I immediately understood it as "chutney" as an Afrikaans speaking person from South Africa, because while Afrikaans is mostly based on Dutch, it has also borrowed words from the Malay language, like "piesang" is the word for banana in Afrikaans, but borrowed from the Malay word "pisang". Just found that really cool.

It makes sense, the Dutch colonized South Africa a little after colonizing Malaysia so the words in the Afrikaan language could have originated from Dutch settlers arriving from Malaya.

@@hugothecat The Dutch also brought Malaysian people as slaves to South Africa, who were absorbed into the ethnic group known today as Coloureds or Coloured People (Kleurlinge in Afrikaans), and just to be clear, unlike in the Western world the term isn't seen here as derogatory.

I have the ultimate respect for uncle roger. Asians take pride in the perfection of one thing at a time. If you can’t make egg fried rice perfect then you should not go any further. This is coming from a Czech Irish man who has a Philippine family that makes lumpia. I am an expert lumpia maker.
Sherson is the top chef in Malaysia.... He is really good in all types of cuisine

Maybe someone already pointed this out in 7 thousand comments but, for the record, the anchovies that Sherson used contain a lot of natural glutamate - the same chemical ion that is released by MSG and which produces the umami flavor. So you can think of it like he's making his own MSG directly in the dish :)

Of course anchovies are natural umami flavor … adding a chemical preservative is totally different
4:22 its true.. there is no need for MSG / AJINOMOTO.. instead you can use anchovies.. to be honest it taste better and more healthy..
My mom is a pro chef and I've been gifted so many of her heirloom cooking implements, INCLUDING her first wok. But all this being said, I'm the only one who's left home so it's not as impressive. But I am 100% her favorite

It used be common to put anchovy on pizza when I was a kid. Nobody that I know of today offers anchovy as a topping today.

The tradition passing down wok is so true in our culture. My late grandmother passed down the whole kitchen to my mother. She even wrote my mother's name on the bottom of wok.

@Uncle Roger, in my opinion, Sherson Lian's fried rice is excellent, and his technique is outstanding. That being said, I would make a few corrections to make a fried rice masterpiece: 1. I would quadruple the amount of garlic (there is no such thing as too much garlic), 2. I would add fish juice (i.e., "Red Boat", or "Golden Boy"), 3. I would add dried Ghost Pepper" powder as a garnish (i.e., I grow Ghost Peppers in my garden), along with the spring onion greens, and 4. leave egg yolkes separate from egg whites: * pour egg yolks onto rice, stir, and turn every piece of rice yellow, and * cook for a short time, and the add the egg whites.
When you can't roast the chef, roast the videographer!!
