The rainy season in Japan coincides with an abundance of Japanese plums (or apricots!) called "ume." Ume is unique in taste. They're too sour to be eaten as they are but make an excellent, fruity, and flavourful ingredient to turn into pickles, syrup, jams, and drinks. With just two ingredients, you can make this delicious ume syrup!
INGREDIENTS:
- 500 g Japanese plums - (ume) before freezing
- 500 g rock sugar - (korizato)
Equipment
- 1 toothpick/cocktail stick
- 2 litre glass jar with an airtight lid
How to make "Ume Juice"
- Mix 1 part ume syrup with 4 parts water/soda.
- Example: 2 tbsp (30ml) ume syrup with 120ml (1/2 cup) water/soda
How to make Ume Jelly
- 150ml Ume syrup
- 350ml Water
- 1 tbsp gelatin powder OR 1 stick (4g) kanten powder - heat according to instructions on the packaging.

    The steps to make umeshu are almost exactly the same, the main difference is that you don't need to freeze the ume. Just clean the ume, fill up the jar with alternating layers of ume and sugar and then fill up the jar with shochu (Japanese white liquor). Typically about 1 litre is good for every 500g ume and sugar. Tilt the jar occasionally and you can start drinking after about 3 months. Ume season is over now so I won't be able to get ume for another year! Hope that helps :)

    Can we make this out of regular red plums like the ones that grow here in the US?

    I quickly searched in Japanese and it seems like you can! Of course, the syrup won't taste the same as Japanese ume and the color will be red or pink. I haven't tried it myself so I don't know how it will taste, but it sounds good. If you try, please let me know how it goes!

    Awesome! Thank you for the explanation I started a about a gallon of plums and granulated sugar, two days ago should I place the whole jar in a freezer or pour it in a bag overnight to get the same results?

    @@timothymitchell8310 Hi Timothy! I've never tried putting them in the freezer after I've already started the process, but if you have space I'd recommend putting the whole jar in the freezer. Hope it works!

    What can we do to use the leftover sugared plums??

    I usually just use them to decorate the drink. The process of making the syrup draws out all the moisture and juices from the plum, leaving just a thick skin and seed behind. They're not very nice to eat after using them to make syrup, however some people use the leftovers to make jam. Hope that helps!

    I did it and some plums have some white stuff on them, is it normal?

    Unfortunately that sounds like mold and I would recommend throwing it away. To prevent mold growing, the jar must be properly sterilized, the plums thoroughly washed and damaged ones removed. You also must remember to tilt the jar everyday so that the plums at the top don't have a chance to oxidize and grow mold. Sorry to hear this happened, I hope you will try again!

    I sometimes use the leftover plums to decorate the drink, but as for eating, I wouldn't recommend it. It doesn't taste so good since all the juice has been extracted and the process leaves you with wrinkled, bitter plums. Thank you for your question, hope this helps!

    I've never thought of trying it, but I had a quick look online and some people have tried and said its good. 500g ume would need 350-400g of honey and it takes about 10 days, after 10 days you need to heat it on the stove to sterilise it. I haven't tried it myself so I can't guarantee its success, but let us know if you try it, good luck!
