I was invited to a potluck party at my workplace few years back and there was this lovely coworker who knew that I was vegan and she got me this mouthwatering vegan fried chicken with same ingredient and I couldn’t tell the difference. I was very grateful to her for respecting my vegan eating style and not to eat any animal product while some of the other coworkers were mocking me for being vegan and telling me that I’m missing out on life and other non sense things and literally asking me to try their meet based foods.

Hi Mate I also don’t trust everyone but she said that she got a it from this well known vegan restaurant and the name of that restaurant was on the food package says made with love with the list of all the ingredients. Anyways I couldn’t pass up and trusted even more with my whole heart

That was so kind of your coworker. So sorry that experience occured with you. To each their own right?! We respect their lifestyles and in turn we would like them to respect ours. If they don't then you'll know. I've been going through it for years. I never cared for anyone else's comments and negativity and in turn I don't enforce my lifestyle on others. I really hope you experience better situations as a vegan. We are a unique lot! A small community that is growing each day! So don't you worry! I am from Texas, in the country. Everything was fried. I recently tried the fried mushrooms. The mushrooms were to die for!!!!!!!! They brought back deep fried memories of my childhood, especially because I cooked them in the cast iron skillet my Granny gave me almost 40 years ago. Cheers!

LOVE this exploration into vegan fried chicken - the oyster mushrooms look the tastiest for sure, but its hard to dismiss how protein-packed and simple the tofu version is. Your videos are an inspiration as always!

Most of us have Omni family, spouses, etc., who insist on eating meat, so substitutes sans cruelty SHOULD satisfy your ideals of reducing suffering, cruelty, and death. Yet here you are, being ugly over a word. Should he have said, "fake chicken," rather than "Vegan?" Grow up.

I strongly recommend you checking out the Chicken of the Woods mushroom. It literally has the closest texture to meat that I have ever seen in a mushroom. Fry it up and it tastes just fantastic!

I agree with using chicken of the woods mushrooms for fried chicken. Oyster mushrooms or King of Oyster mushrooms are better suited as a replacement alternative to Scallops and Calamari seafood option because it truly shares a similar texture.

So in Mexico the oyster mushrooms are cetas and my mom used to make us cetas con mole so like a vegan version of chicken mole ! Sooo delicious and growing up I had to take a double look because oyster mushrooms can imitate chicken texture so well ☺️
I love how natural and upbeat you are. I'm starting to branch out on my vegan recipes, I've never tried making seitan but I want to do it now!

@@gazoakleychef Yes, please! Vegan cheezes are so damn bland, and leave a weird film on one's teeth. I used to love mushroom and cheese tortellini, sometimes with spinach. They were filling comfort food that didn't take a thousand ingredients and hours to cook. I'm afraid your recipe will be very challenging in those regards, but I'm willing to try.
I was amazingly surprised how good the oyster mushroom fried chicken version was. Didn't tell the wife and kids until after they finished. A 2nd and 3rd piece. New fans indeed.
His recipes always looks so so good, I wish I had the time to cook like this as plant based eaters are very overlooked and I notice people think just because your plant based all you want to eat is salads and square unflavored tofu🤦🏾♀️

I tried to look up a chemical analysis of the 11 herbs and spices and a couple sites claimed that when a chemical analysis was done the coating was just flour, salt, pepper and msg.

Best recipe I've made this year, hands down! I try at least 3 - 4 new recipes a week and in many cases make quite a bit of alterations. This one is perfect as is and I wouldn't change a thing. I opted for the extra firm tofu option, even though I was like "Woah woah, all the flavor from your breading? Let's see my guy." The family went nuts for this and I can't wait to make it again. I made some collard greens, mashed potatoes with gravy and biscuits to bring it all together. There was no need to even dip these babies in the gravy, though my mind is spinning with ideas to throw them on biscuit sandwiches. But yes, this is a clear winner and it's going to be a gimmie for me if I cook for just about anyone that comes over. Thank you!!!

Holy ish! This is by far my favorite vegan chicken recipe. Just made it and it was AH-MAZING. I'm not going to lie, I was nervous with all them spices, especially the 2 tsp of cayenne pepper and the sugar. I was praying, Lord please don't let this be a disaster. Sorry for doubting your wisdom @Gaz. Well done. Oh and I always make my chickn with oyster mushrooms.

A trick I remember from a video long time ago was that the crispy skin is one of the best parts, so they wrapped their vegan chicken in rice paper before breading and frying. I've never tried it but curious about trying that with the seitan version

You can also baste it with olive oil and bake it or place you faux chicken pieces into an airfryer without rice paper. It will taste pretty similar.

Everything you make always looks so delicious. I have been cooking professionally for years. I have come up with quite a few recipes myself. having given up meat 10 years ago. I can't wait to try some of yours.

Sub the flour with 1/2 c. cornstarch and 1 c. cornmeal along with your spice mixture and see how well that works out. Also, to make it lighter and crispier, add 1 tsp. baking powder to 1/2 tsp baking soda to some Just Egg (or your favorite egg replacer) and add your buttermilk to that mix. Dip your "chicken" into 1/2 c of cornstarch, coat well, then dip into the buttermilk mixture, and then finish by dipping into your cornstarch/cornmeal mixture.

Kentucky fried chicken tastes good so my mom always would bring me to Kentucky fried chicken but I wanted to be a vegetarian as a girl growing up in Hawaii I'm like I like the crunchy crust tastes super good I love the flavors but I always was hesitant to have any animal products growing up except dairy because I was like oh it's okay to have dairy that's not the animal now I have learned that dairy is not nice to animals even those organic eggs organic milk so I'm really trying to be vegan 🥗🥬🌿🥑 this looks good I just tried to make some vegan portobello mushrooms 30 years no red meat my last steak was when I was 17 yay 😊

Such a great video idea! I would definitely like to see more of these! I wonder how the tofu fried chicken would've turned out, if you would've used the freeze-and-thaw method. Mary's Test Kitchen has some great videos on this and her tofu fried chicken looks amazing and was definitely a game changer for vegan cooking when she first published it on KZread.
The mushrooms looked amazing, though I'd probably have to go seitan on this for the protein content! Tofu I will always prefer fried with a panko coating in a bao bun with veg and okonomiyaki sauce on top - can't recommend enough. Thanks for sharing your amazing recipes, I'm really enjoying trying out the dishes from your latest book xx

There are allegedly 11 herbs and spices. The main mising ingredient is msg, though salt is a close replacement. Msg is stated on the official kfc seasoning packet. The other main thing is a pressure cooker.

Don't know how it's possible, but this channel and these videos just get better and better as time goes on. Seriously higher quality (and more interesting to watch) then network televised cooking programs. Props to Gaz and the crew, all the hard work really shows!
This is also something I have experimented with more than anything since becoming vegan! I have finally nailed it, using my own Seitan recipe (poached), rice paper ‘skin’ and delish breading (I use ‘buttermilk’ and pickle brine) - then definitely fried, not baked…. And after at least 20-30 different experiments/recipes, I think I am finally there texture/flavour wise! I have had such bad experiences with Jackfruit that I have finally given up with it…. Thank you so much, as ever, for all of your experiments too, as I think I have tried all of your recipes, and you were paramount in me sticking to a vegan lifestyle, as your food is so exciting and delicious…. Also, little tip, once adding your ‘acid’ to your milk for your buttermilk, it will thicken more quickly in the fridge!

Have you tried the double freeze technique on the Tofu? It really adds texture.

@@sid35gb get firm tofu. As soon as you get home put it in the freezer. Leave it overnight. Take it out. Let it thaw in the fridge for a day. Then put it back in the freezer. Thaw it again when you are ready to use. The ice crystals make the tofu fibrous. More like meat.

FYI for your cameraman. The original Kentucky Fried Chicken (aka KFC) recipe has always been 11 different herbs and spices. It's something I recall fondly as a kid. My parents would order a barrel of the stuff on the occasional Sunday for dinner. They used to drill the fact of the 11 different herbs and spices recipe into our heads with the old-school TV commercials back then. Colonel Sanders and his boys made it finger lickin' good too. Nowadays, as a dedicated vegan, like yourself, I do love mushrooms a lot. I will definitely try the mushroom version, by popular demand. I might add some dried mustard powder to make it 11 ;P
