I love how easy thebuns are to make. The trick to them is to let them cool gradually after baking. I just leave them in the oven to cool and they turn out great. In our live video recently we shared how to turn this recipe into a pizza crust, tortillas and hot dog buns, so it's quite versatile.

Nutritional Information:
Cal: 184 | Net Carbs: 0g | Fiber: 13g | Total Carbs: 5g | Fat: 11g | Protein: 15g
Ingredients:
100g/ 1/3 cup + 1 tbsp Cottage Cheese
93g/ 2 Eggs
4g/ 1 tsp Vinegar
4g/ 1 tsp Baking Powder
Pinch Salt (you can also add dried herbs or other seasoning)
18g/ 3 tbsp Psyllium Husk Powder
METHOD: For the best results please follow the tutorial provided in the video.

Just made and ate one. This is literally one of the best softest buns i ever ate, keto or not! Omg. They are amazing. I used psyllium husk. They came out purple!! Lol!😊

Oh wow, I'm glad they're almost perfect. Now let's talk about why they turned purple. Please take a look at your baking powder. If it has aluminium in it, that means your brand of psyllium reacts to baking powder with aluminium like that. To fix you could change your psyllium husk powder or get some aluminium free baking powder. Hope that helps 😊😊😊

@@CookwithMel1 i ended up making your flourless nut free buns using tahini sauce as i already had the ingredients. Everyone in the house is a fan, its safe to say this one was a home run. Most important wifey is so happy that we can finally get our fussy eaters to eat a bit more healthier without putting up a fight.
At last a "cottage cheese buns" recipe that actually uses cottage cheese! The other day I made another recipe for buns that was like pancake batter. Turns out the "cottage cheese" in the recipe was actually paneer, which, of course, is much much firmer than our cottage cheese. I'm going to make your recipe, Mel, and will report back. Thank you for all your efforts to bring us new keto delights all the time!

Made them last night. They turned out a bit denser than yours, but love the taste and will definitely make them again. I have something for you for a change 😇 - hope you don't mind me imposing. Yesterday, I also made some friands. Maybe you want to try them and if you like them share your version with your viewers. Since you're an amazing cook you'll know how to make friands, so here are just the ingredients: 6 egg whites, beaten, 185g melted butter, 125g almond or hazelnut meal, 75g cassava flour, 240g allulose or less if you like it less sweet. Makes 6. I baked them for 25 mins at 175deg.

Oh wow Sabine thank you so much. I'm relieved that you enjoyed the buns :)) Can I ask... Do I beat the egg whites to stiff peaks or just beat to mix? I couldn't thank you enough...I last had friands when my mom made them for me 10 years ago xxx

@@CookwithMel1 You're very welcome! I used egg white powder and beat until stiff peaks formed. I've also done it without beating, but I think the result will be better with the foamy egg whites. I hope you like the friands. I've done another batch with ground almonds and orange flavour - also delicious...

Hi Mel, super excited about this recipe. I just tried it, not sure what i did wrong, but mine did not come together anything like yours. It was super soupy, i had to add a lot more flax meal and it didn’t thicken up likes yours. They are on the oven now, finger crossed they turn out good. Thanks again for all you do.

Perhaps your trouble was that you used flax MEAL, instead of flax POWDER. If you watch the video, it's a very fine powder and she says powder. I didn't know there was a powder; I just have to find it. Just like there's psyllium husk and powder. Hope this helps.

Hi Cathy, thanks they are real easy. Yes if you don't have a blender you can use a whisk. Don't worry if the cottage cheese doesn't dissolve. For me it made no difference. You're welcome, I hope you enjoy it and hope you can make the live video tomorrow. I have a surprise recipe in store.

Hi 👋 I haven't tried that...I was thinking the loaf would be too wet on the inside. I'm going to try cottage cheese with CK Flour and baking powder though. I believe that will work 😊😊😊

@CookwithMel1 you are probably right about the wetness. I just made a loaf of bread using cottage cheese and milk protein from another channel. It was so wet, the woman suggested that you toast it before eating to dry it out. On a side note, made my husband French toast this morning, using her modified soul bread as she calls it, and one of your cottage cheese rolls which I cut in 3 pieces to make it thin. Yours won hands down! I do add a tablespoon of egg white powder to my doubled recipe of your rolls and they are amazing!

Ela, did you see I let it cool in the oven? I was thinking of you the whole time while making this video lol and your results. So I was careful with the instructions. Personally I thinking 160c is too low in your case , because why are the buns rising for me and not for you. Love always ❤️❤️❤️

The last 3 attempts I let them cool in the oven too but I guess/think that you are right and that the temperature is too low for my oven - even when it's the first time ... and I made already a looooooot of cakes and cookies in this oven 😇😇😇! Mel , but you have healthy thick hair. I’ve been keto for over 6 years and mostly women will suffer hair loss while starting keto because of lack of enough protein. Now I mostly eat nutrient dense protein and what a difference it made in the strength of my nails. But good luck and the muffins look real good .

You could probably pulse them for a few seconds in the blender to turn them to a powder so they would measure properly.

That's another easy recipe from our favorite KZread chef! Prenatal vitamins do help with hair growth, but your husband might wince at the thought. 🤭 Cheers!

My hair isn't enough for one head 😔 Good old keto hair loss problem
I'm so frustrated! Sorry, I followed the recipe exactly and it's soup! I have no idea how you got a batter from this that you could roll in your hand. I've checked the measurements over and over and I know that I used the amounts that you said and wrote. My eggs were even a bit small. I've now added two more tbs of flax and it's still soup.

Terry your Psyllium Husk is not doing what it's supposed to do. See how mine was soup before I added the P.Husk powder too?

@@CookwithMel1 I just peeked at mine and although they haven’t risen, they smell delicious and will probably be ok for me. I am not really picky. I added everything but the bagel seasoning and some chia seeds. Still looking forward to trying them!
