Turkish kofta kebab tastes amazing in this easy way with eggplant!

Ingredients:
Two eggplants (600 grams)
(600 grams) of minced lamb meat
(100 grams) of grated onion
(10 grams) of grated garlic
One tsp of paprika
Half a tsp of salt
Half a tsp of black pepper
Half a tsp of chili flakes
One cup of yogurt (200 grams)
Two cloves of garlic (6 grams), grated
Vegetable oil for cooking
Two tbsp of butter (30 grams)
Half a tsp of paprika
Instructions:
Preheat your oven to 400°F (200°C).
Make small holes on the sides of the two eggplants and place them in the preheated oven. Roast for 20 minutes or until they are cooked through.
Once the eggplants are done, cut them in half and scoop out the inside. Mash the eggplant and strain the liquid. Set it aside to cool down.
In a mixing bowl, combine the minced lamb meat, grated onion, grated garlic, paprika, salt, black pepper, and chili flakes. Mix everything well.
Wet your hands and shape the lamb mixture into kebabs on steel skewers or wood chopsticks. Refrigerate the kebabs.
In another bowl, mix the mashed eggplant with yogurt, grated garlic, and season with salt and pepper to taste. Pour this eggplant yogurt sauce onto a serving plate.
Take the kebabs out of the refrigerator and cook them on a pan over medium heat with a bit of vegetable oil or on a charcoal grill if available. Cook the kebabs from all sides until they are nicely browned.
Place the cooked kebabs on top of the eggplant yogurt sauce.
In a small saucepan, melt two tablespoons of butter over low heat, and mix in half a teaspoon of paprika. Pour this butter and paprika mixture over the kebabs.
Turkish Grilled Lamb Kebabs with Eggplant Yogurt Sauce are now ready to be served.

حبتان من الباذنجان (600 جرام)
(600 جرام) لحم ضأن مفروم
(100 جرام) بصل مبشور
(10 جرام) من الثوم المبشور
ملعقة صغيرة من البابريكا
نصف ملعقة صغيرة من الملح
نصف ملعقة صغيرة من الفلفل الأسود
نصف ملعقة صغيرة من رقائق الفلفل الحار
كوب واحد من الزبادي (200 جرام)
فصان من الثوم (6 جرام)، مبشوران
زيت نباتي للطبخ
ملعقتان كبيرتان من الزبدة (30 جرامًا).
نصف ملعقة صغيرة من البابريكا
التعليمات:
سخن الفرن إلى 400 درجة فهرنهايت (200 درجة مئوية).
نصنع ثقوباً صغيرة على جانبي حبتي الباذنجان ونضعهما في الفرن المسخن مسبقاً. اشويها لمدة 20 دقيقة أو حتى تنضج.
بعد نضج الباذنجان، نقطعه إلى نصفين ونخرخ لب الباذنجان من الداخل. يهرس الباذنجان ويصفى السوائل. ضعه جانباً ليبرد.
في وعاء الخلط، يُمزج لحم الخروف المفروم، والبصل المبشور، والثوم المبشور، والبابريكا، والملح، والفلفل الأسود، ورقائق الفلفل الحار. امزج كل شيء جيدًا.
بلل يديك وشكل خليط لحم الخروف على شكل كباب على أسياخ فولاذية أو عيدان خشبية. قم بتبريد الكباب.
في وعاء آخر، اخلط الباذنجان المهروس مع الزبادي والثوم المبشور وتبله بالملح والفلفل حسب الرغبة. تُسكب صلصة الزبادي بالباذنجان على طبق التقديم.
أخرج الكباب من الثلاجة واطهيه في مقلاة على نار متوسطة مع قليل من الزيت النباتي أو على شواية الفحم إذا توفرت. اطهي الكباب من جميع الجوانب حتى يصبح لونه بنيًا جيدًا.
ضع الكباب المطبوخ فوق صلصة الزبادي بالباذنجان.
في مقلاة صغير، أذيب ملعقتين كبيرتين من الزبدة على نار خفيفة، وأضيفي إليهما نصف ملعقة صغيرة من البابريكا. يُسكب خليط الزبدة والبابريكا فوق الكباب وبالعافيه.
