Iron Dessert (Demir Tatlısı)
Servings: 8-10
Difficulty: Medium
Cooking time: 5 minutes
Prep time: 15 minutes
For the batter;
1 cup all-purpose flour
1+1/5 cup plain yogurt
3 eggs
1 teaspoon baking powder
1 pinch salt
For frying;
700-800 ml sunflower oil
Rosette Irons or cookie molds
To Serve;
Chocolate sauce, 60 g milk chocolate + 100 g crème (36% fat)
Sauce from 60 g white chocolate + 100 g crème (36% fat)
Pistachio
Powdered sugar
Tahini and molasses mixture, 2 tablespoon each or adjust to your taste.
• To prepare the batter, mix the flour, yogurt, eggs, baking powder, salt in a bowl and beat until smooth.
• Heat the oil to 160-170°C (320-338°F) in a wide and shallow pan.
• Heat the irons in hot oil. Lift the iron and shake of excess oil. Dip the iron in batter to 1/4 inch from the top of the iron, then dip the iron immediately into hot oil. When you keep it in oil for a short time, the batter will release the mold. You can take it off with o fork if it sticks.
• Fry until golden and transfer on wire racks.
• To make chocolate and white sauce, heat the cream, remove it from the heat and stir in chocolate until melted.
• You can serve these beautiful rosettes with a combine of chocolate sauces, pistachio powder, tahini and molasses or just powdered sugar. It’s up to your creativity! Enjoy 😊

    I’m Sri Lankan-American and I have found memories of my grandmother, making these for New Year’s celebrations. In Sri Lanka, these are made with coconut milk added to the battery, which gives these an sweet taste. They Use the same kind of stamp as well. It’s incredible how food can unite so many parts of the world. Thank you so much for sharing this!

    Thank you soooo much for this lovely traditional, crunchy treat!! I'm in Pennsylvania, PA, and my Virginian/Maryland great-grandmoms and aunts made something really close to this, just with a slightly thicker batter and a smidge of ground vanilla bean. We kids used to pour a touch of thinned out black strap molasses on top. My batter for French toast is just like this--a total, accidental experiment [I decided to use plain yogurt instead of milk that morning]. Yah!!! ❤❤❤ Refika, you're a *marvel* and a real treasure ... thank you *so* much for all your joyous sharing these years! I love your channel and all that I've learned. ❤

    In México we have a similar, we call it “buñuelos”, we dipper them in mix of sugar and cinnamon when still hot, and then eat them. Crunchy and adictive ❤😊

    In Malaysia and Singapore,, the Muslims use a rosette mold like the turkish ones. It's Rose 'cake', eaten plain. It was an Eid pastry.

    In Endonezya, we called this "kembang goyang". Kembang means flower, and goyang means to shake, woobly. The technique is similar, but the ingredients and the presentation are different. Instead of just plain flour, eggs, yogurt, and baking soda, we use the mixture of plain flour, rice flour, corn starch, coconut cream, eggs, sugar, and sesame seeds. No leavening agent at all.

    In India, in kerala (INDIA) , this is also made with rice flour.. makes its ever so crisp.. a bit of black sesame seeds and cumin seeds are added.. it's called ACH-APPAM... I will surely try your recipe..with yogurt.. thank You.. love your recipes❤

    these bring memeries from the 70s. When I was a kid I went to a fancy xmas party where they had something that looks the same but only had powdered sugar on them. I showed how much class I had by putting a few in my suit jacket pockets.

    I love how even in America, we have something very similar. It can be done without a mold and called a funnel cake, because the batter is poured through a funnel to make a small spiral

    In Tunisia my husband's homeland they make something similar called chbebek el Janna they put a sugar syrup with Rose water on them I've made them a few times they are very finicky I always have hard time either my metal design piece to hot or it not hot enough and dough won't stick thanks for some pointers on how to make them I may try again soon
