I believe it was mostly from symptoms, family history (our grandmother's brother was also diagnosed as celiac decades earlier), and a stool sample. Avoiding wheat, gluten, and barley was what she needed to do but as she reached teens, she started to be able to eat some (she was one who would sneak and eat a bit of things she knew she shouldn't eat and pay for it later), which was odd because you can't just outgrow Celiac disease...although I've also wondered if she's just a freak because she also had hepatitis (tested more than once and confirmed positive each time) and a year or two later was tested again and no longer had it. Medical staff was baffled. They ran the test again and it was negative. 🤷🏼‍♀️

Honestly I had mixed feelings on the reeces cookies. I make gluten free cookies all the time that are just egg, peanut butter, and sugar, but I think I know why this doesn’t work as well. First of all, chocolate completely changes baking things and the sugars in that can act weird. Second of all, my experience with peanut butter cookies is that the more you mix them, the greasier it gets. There’s a certain breaking point where it just gets super greasy and bakes weird

I've done similar biscuits using peanut butter a few times, I use crunchy peanut butter and instead of sugar I do use an erythritol + stevia blend and I also add cocoa powder for some chocolatey flavour and they come out good. I mix by hand so never had any mixing issues, good to know about the greasier thing though.

As an avid baker, I’ve made some interesting cookies myself. I’ve made habanero caramels with pretzels in a sugar cookie recipe and it was a hit. The spice gives it great flavor if done right. I wouldn’t suggest putting the peppers straight in. Turning the peppers into a sweet sauce (purée peppers with soft butter and sugar) will give the cookies a less chunky texture and more smooth flavor with the surprise little punch. Just a little tip when using peppers in baking.

I used to make Habanero Pumpkin Walnut cookies, and the ladies I worked with loved them. The basic recipe is available on Recipelink (and a few other sites) and was adapted from Chili Pepper Magazine. The site where I found it years ago noted that you could adjust the amount of habanero powder to taste. I think I used to take a few (deseeded) dried habaneros from the grocery store and placed them in a coffee grinder to make the powder. Much more even distribution than minced, though still take precautions like gloves. Reconstituted from dried also worked, but make sure to make the pieces finer than they were in this one. My mom particularly loved the cookies with a little cream cheese spread on the bottom of a cooled cookie.

The comment of "I'd rather just eat peanut butter" makes me think of the three-ingredient peanut butter cookies: peanut butter, egg, sugar. If you guys aren't into super sweet things, that might be better for you! I definitely recommend it for any peanut butter gremlins out there. It gives the satisfaction of eating a spoonful of plain peanut butter, but it's a little sweet and is a cookie!

tbh a weird cookie you should try is spinach cookies! i made cookies where i used finely chopped spinach (pretty much puréed spinach) and mixed it into the dough, and then i used white chocolate chips in it. it was really nice, the only part that made me a little disappointed was that they weren't very green, and also even if i used a lot of spinach, they barely tasted of spinach xD but it's worth a try if you like spinach!

I've made so many 3-ingredient peanut butter cookies that I knew immediately what that recipe is going for. It's basically just the same thing, except the sugar has been added to chocolate first. Honestly for that many reeses, the batter needs at least two eggs. The chocolate and the peanut butter have a lot of fat in them, so they need the egg to bind it together and "fry" the cookie rather than just melt. Might be worth halving the number of reeses and trying again, they would likely be more cookie like and less ginger-snap like if you did. Love the video though!

15:00 me making a watercolour painting. Lol Also, the reece one is basically just how you make peanutbutter cookies but with chocolate, and for WAAAAY more money than you need to spend on making peanutbutter cookies. Peanutbutter cookies: 1 cup of sugar 1 cup of peanutbutter 1 egg Do what they did but instead of the blender, just stir it. You can crush up chocolate with a blender and add it if you want the exact same thing, but I prefer just to put either a mini peanutbutter cup on top, or put peanutbutter m&m's inside. You do need to grease the pan too though. 325 for 8 minutes. Cookies. Oh wait, you also need to press the cookies down with a fork to get the criss crossies.
