"Truly Japanese Cuisine" is a new series of video produced by Cuisine Kingdom and Japanese Culinary Academy.
The second session features Chef Kurisu of Arashiyama Kumahiko, a long-established Japanese restaurant in Arashiyama, Kyoto.

This time, Chef Kurisu of Arashiyama Kumahiko in Kyoto, introduced us to a dish using sea bream: Simmered Sea Bream Head.
- Ingredients (for 4 servings)
1 sea bream head
900cc sake
150cc mirin
40g sugar
90cc dark soy sauce
1 burdock root, thicker part of about the length of 24cm (washed to remove the soil)
20 pepper-buds
marinated butterbur, as needed
