Coffee Cake
Ingredients:
Eggs 3
Brown sugar 75 gm
Icing sugar 100 gm
Flour 175 gm
Coffee 3 tbsp
Butter 175 gm
Walnuts 100 gm
Baking powder 1 tsp
For The Chocolate Ganache:
Whipping whip cream 200 gm
Coffee 1 tsp
Chocolate as required
Method:
In a bowl beat together brown sugar, icing sugar and butter. Then add eggs one by one and egg yolk. Beat well. Now add flour, baking powder, walnuts and coffee, fold it well. Then add the prepared batter in a greased pan and bake it in an oven at 160 c for about 30 minutes. Now remove the coffee cake from the oven and allow it to cool.
For the chocolate ganache, in a bowl beat whipping whip cream. Then dissolve coffee in the water and add to the cream, mix well. Now add the chocolate ganache onto the cake, spread it well. Lastly garnish with chocolate and serve.

Triple Chocolate Mousse
Ingredients:
Readymade mousse cake 1 sponge
Egg yolks 2
Sugar 30 gm
Milk 180 ml
Whipping whip cream 200 gm
Gelatin powder 10 gm
White chocolate 40 gm
Dark chocolate 60 gm
Milk chocolate 60 gm
Method:
Heat milk and sugar together. Then add egg yolks and mix well. Now dissolve the gelatin powder in the water and add to the egg milk, place it onto the heat and cook for a while. Then remove it from the heat and allow it to cool. Now in a bowl beat whippy whip cream and add to the egg mixture. Fold it properly. Then add the mixture into three separate bowls. Now in a sauce pan melt white chocolate, dark chocolate and milk chocolate separately. Then in the cake ring place the readymade mousse cake. Now add mousse mixture. Then add white chocolate and allow the mixture to set in the fridge for about 30 minutes. Now add dark chocolate and allow the mixture to set in the fridge again for about 30 minutes. Then add milk chocolate and again allow the mixture to set in the fridge for about 30 minutes. Lastly once the mousse is set, garnish with chocolate and serve.
