Trini Coconut Sweetbread (Eggless)

Trini Coconut Sweetbread is a moist, coconut based sweet bread studded with a colorful medley of glazed fruits. This eggless recipe makes the perfect Trini Coconut Sweetbread, and it’s so simple and fun to make!
Ingredients:
2 cups all-purpose flour
¼ tsp salt
½ tsp cinnamon
½ tsp nutmeg
4 tsp baking powder
¼ cup granulated sugar
½ cup glazed fruits, plus extra for the top
3 tbsp chopped maraschino cherries
2 tbsp raisins (optional)
1 ¼ cup freshly grated coconuts
1 cup warm evaporated milk
¼ cup melted butter
1/3 cup condensed milk
1 tsp coconut essence
½ tsp vanilla essence
1 - 1 1/2 tbsp syrup from maraschino cherries
Glaze:
2 ½ tbsp granulated sugar
1 ½ tbsp hot water
1 ½ tbsp granulated sugar for drizzling
Bake in a 9 ½” x 5 ½” pan, in preheated oven at 350 degrees for 40-50 minutes until the top is golden brown, and a toothpick inserted comes out clean.
*To make this recipe with eggs, simply substitute ½ cup evaporated milk with 2 large eggs.

I just made this ... i love it ... i added an egg (just because 🙂), i replaced half the flour with spelt flour, used coconut milk in place of the evap milk and decreased the sugar in the batter to 2 tbsp). My children are yumming it down 😀. thank you for the recipe.

Wonderful! Baked this today. It came out great. I was really amazed at the texture considering it dosent have eggs, because I tried other recipes and it came out crumbly. 👍👏 I left out the glaze though....didnt really wanted the extra sugar.☺

You can cut back the sugar in the batter by 2 tablespoons so that you can glaze it.. the glaze is just so signature for sweet bread.. i hate to lave it out 😊
