In this video we turn a simple dessert into a fine dining experience. If you take a dessert you already know well and just construct it differently, or maybe add a few things to it, you can come up with something unique and amazing.
This video features a popular South African Peppermint Crisp Tart, except that we set it in a cylinder to create height in the dessert. To add more texture to the dish we make a sesame tuile biscuit, and we also think about adding a sauce component for flavour and intrigue.

    I am a very seasoned cook in Germany, and it's so sweet to see a recipe announced as "traditional and wellknown" that I never had heard of before! :D ...looks awesome and I need to try it! Theres just the problem that we can't buy caramellized condensed milk, nor peppermint chocolate in our stores... (just to give you an idea of how "traditional" this is in our part of the world!)

    Thanks for your comment ☺️. You can make your own caramelized condensed milk (dulce de leche) by cooking regular condensed milk. It takes a little while in the oven, but it's delicious. If you can't find mint chocolate, use dark chocolate and a couple of drops of mint essence 😊

    I love how it looks so elevated and will definitely steal that idea of decoration. Honestly, I have to admit I struggle with the idea of adding gelatine to a known, well-working recipe. Gelatine alters the structure and texture of the dessert completely. A former fluffy cloud-like dessert becomes more likely a firm pudding-like dessert. That could it make less delightful than the original recipe, if particularly the fluffiness makes the dessert so special. I would love it if you could give some advice on plating desserts differently without altering the recipe.

    Thanks for your comment. I haven't altered the recipe in anyway my recipe for Peppermint Crisp Tart has always had gelatine added. You can omit it if you are making it in a bowl type dish to serve, but if you want to cut and serve portions the gelatine is necessary.. Most cold set desserts have some sort of gelatine addition. The tweaks and additions I mentioned in the video are adding the sauce and tuile, and setting the dessert in a cylindrical mould. The best way to serve it differently if you want to omit the gelatine is to layer it in special glasses and add the garnishes 😉

    Sometimes caramel art can go soft on you, you would have to try it to be sure!

    There are a few things you can try, though I haven't experimented with it myself...Agar Agar would probably work best (substitute about 1/3 to 1/2 of the amount of gelatin) or you could try a vegan gel.
