Bruno is certainly one of the best lol. I think that being a great chef is mostly about knowing exactly what you prefer in food and refining it with technical precision and replicability.. so everyone will like different chefs, as all chefs have a different approach and all critics have unique preferences. Food/diet is rapidly becoming the most controversial and complex topic of our age, likely to cast its shadow even upon sex at it's current trajectory. Anyways, if you ask me, the greatest chefs of our time are Bruno, chef John (food wishes), and maybe Guga (guga foods). A couple years ago, i might have said heston blumenthal and gordon ramsey, etc. I think they've all but fallen out of love with cooking as an art, though, and are quite apparently not as inspired as they once were. I guess TV and extreme wealth/prestige does that to you if youre not extremely careful. Hell, look at what happened to marco pierre white.. he was once on top of the world, now hes a talking billboard for knorr's powdered msg/ "flavor" packets.. I pray that this does not happen to Bruno

@@HienNguyen-rz3iw "underrated" means that people do not give Bruno the full recognition he deserves for creating things like this. Alternatively, when somebody says someone is "overrated", such as most celebrity chefs on television, it means that they gained recognition by politics or misconception and maybe arent as good as critics (us) "rate" them.

Ooh la la! What delectable food, cooked by such a hunky chef, ha ha! A feast for all the senses. Loved seeing how you trimmed the meat. I usually save the tough parts for my little dog, who loves my cooking, and hangs around the kitchen hoping to get some goodies. Not very often you can eat fillet mignon these days. It is so cheap in India, but not here in the US. My Belgian mother used to cook us these steaks every Sunday lunch. Loved the sauce although I would have chopped and caramelized the garlic into that sauce too. I also add a tiny bit of mustard for a hint of bitterness in the sauce. The Chanterelles were so beautiful. An elegant mushroom. Merci, Chef Bruno! C'est delicieux!

I live in Eastern Europe and chanterelles are abundant and cheap here in the autumn. I've never heard of anyone peeling them and I don't think that's strictly necessary. They're also good fried with bacon, garlic, and sour cream.

Each time I watch chef Bruno’s video I want to cook at home rather than going to a fancy restaurant. Best cooking channel, over and over again.
Just made this to go with a sous vide chuck roast with morels and this sauce is boss. I used the water from rehydrating the mushrooms to reconstitute the demi glace, and included the juices from the sous vide bag. Top notch.
Excellent demonstration of knife skills and classic cooking techniques. So much to learn, thank you!

This man‘s cooking is really next level. I love his dessert recipes the most (although I couldn’t do most of them, but stuff like the lemon or the hazelnut blew my mind) but those savoury recipes are great too!

In sweden you can can get chanterelles for free but you have to pick them your self in the forest. There are lot's of them and free to pick wherever you find find them.

I'm not an expert mushroom hunter, but we know a guy who is for consultation. I was sooo happy to find several patches of gold chanterelles around my parent's house a couple years ago. Wish I had this video then! Unfortunately they haven't been popping up in the same area so much lately. C'est la vie.

I add green peppercorns in addition to the black pepper. I will also add either finely sliced shallots or scallions. Demi Glace is very difficult to make and keep so we used beef bouillon. I’ve been cooking this recipe for 40 years when it was cooked table side at a fine dining restaurant I worked at. . I will say that you do a nice job.

Ps. You can get Knorr Deme Glace mix in a large Container, a little over a qt. In volume. I just keep the unused in the freezer.
