Bruno! You prove once again that the best food is Grandma's cooking elevated.
You're a genius! Best cooking channel of KZread!
Bruno makes Gordon Ramsay look like a frustrated truck stop cook.
The process seems so long but it looks oh so worth it
This cooking channel is awesome. I come here when I'm really trying to impress someone :-) Thanks Bruno! Keep them coming!
OMG! I love meat and vegetables paired with wine. So tender and succulent. Bravo!
This cooking Channel is the best of the best. Now iam hungry!
OMG BRUNO!! , I just melt hearing your voice and watching you cook!! 🤤

Congratulations for being the first vegan I've seen not acting like a superior dickwad!
You are simply the crème de la crème, by learning from your video, I don’t’ even need to watch others. Techniques and steps you have shared are the fundamentals to making each dish a success
Oh my dear heavens...this has to be the most amazing short rib recipe out there. 😍
Merci beaucoup, chef Bruno! My classmates and I marvel (and drool) over your videos! Please continue your Parisian dishes...they're so wonderful.
I can't wait to try this!! As always, thank you for the detailed instructions.
one of the best dishes i´ve ever seen ...i love it thanks for the recipe and tips. i am going to make it this weekend.
So lovely!!! The chef and the dish!!!! Can't wait to try this!!! Thank you !!!
Definitely trying this one. I am a short rib fanatic, and make them all the time (ox tails are another passion). This looks great. For cuts of this type, nothing beats low and slow.
You are a proverbial badass. I just watched Wolfgang Puck, Gordon Ramsay, and other big names cover braised short ribs. NONE of them discussed the details such as removing the fat and preparing the glaze. You method is far superior. Do you like adding (cooked) tomato paste to the mirepoix? Also, it looks like you covered the meat in liquid but I was taught to leave about half of the meat exposed. Please explain if you do not mind. Love your channel!

I came back just to watch this again. My mouth is watering. I LOVE SHORT RIBS! Sincerely, you do the very best job of showing how this is done. I picked up a few more tips I missed the first time. The devil is in the details!
3 jours de préparation mais ça a l’air vraiment fabuleux! Merci chef pour cette belle recette!
great, great, great advice on retaining meat firmness by pressing it with a weight!
i cant tell if this is really good or not, it looks good and soft meat BUT any prime expensive meat cut is soft almost anyway you cook it, i would love to know if anyone has tried this, with more cheap cut meat, and it turned out soft and great
You are awesome! Cooked it and loved it! Beyond words...
That looks amazing! Well done!
Seems difficult to do but looks delicious
I seriously need this in my life.
I cant wait to make this. Looks delicious.
To a meat lover, this has made me soo hungry and made me salivate so much.
The best dishes take at least 3 days to make :-)
Can this be done in a crockpot? Also, I LOVE YOU BRUNO!! I suggest your channel to everyone I know that cooks :)

+Dena Payne Maybe, i am not familiar with but it should.. Thank you for your kindness :)
Great meat recipe, Bruno. I would like to see you do a great spaghetti recipe.
It is fantastic, what you made. For a couple of years I've been braising at least once a week. Commercially, 50+ people. What I found with diced beef, is kind of waste of time to brown, with over 5 kg, What I do instead cooked on low for an hour, in its own juices, skim and remove once all gunk, fat and almost an litre of its water release. Than add the miirepoix, stewed separately just in 250 ml of beef stock, and wine (if available). 2.5 hours all later, is usually done.
Bruno, could you expand on the differences with the beef cheek? the cheek you floured, salted and peppered before browning here only salt? I have seen this difference in many cooking books, including the french ones (although if I remember correctly Bocuse always floured?). Keep up the excellent work, truly enjoying it! greetings from Belgium. PS: no plans on including some beer in to your cooking?

+Jan Vdw There are different methods out there indeed. Flour is not necessary.. If you want beer just substitute wine for beer.. that's simple.
Bruno...you are brilliant!!! excellent recipe! I'll be making this :)
Is surely delicious. Only point is that it takes 3 days to finally bring it on the serving dish and diners eat it in 10 minutes .... They'd better appreciate each bite of it!

Another masterpiece Chef Brun's,lol.
Wonderful! will try!
I'm hesitant to make this since I only cook for two. Would freezing the left over shortribs and sauce ruin them?
awesome intro music
OMG that looks AMAZING
Vous me donnez le goût.
sir, would you make video about kind of steak sauces please...
I can t use wine..😣 malheureusement ca a l air très bon
Chef, this is just perfect! If possible, I have 2 questions.. What will be the benefit of making it in a dutch oven? Anything differs if I make it in a stainless steel pot? And is it OK to freeze the meat and thaw in the sauce afterwards? Thanks and cheers :)
@BrunoAlbouze

+Emre Ozer Dutch oven is perfect for braising. As long as your pot can sear meat well and is oven proof it should be fine. You can also sear meat using a skillet and transfer the all thing into a shallow dish and cover it.
I just love this guy,, 😋😋
can i replace the wine with something else ? i cant use it due to religious resons. this recipes seems amazing ❤ thank you

Chef can you get that cut here in the U.S.? and would it be just as you described it ? Merci.
OMG so good
ca serait aussi parfait avec des haricots verts. un jour il faudra nous montrer comment les cuire parfaitement. ca parait idiot mais je n'ai jamais reussi a les faire "comme au restaurant"!!

+frederic r Parboil them for about 6 minutes.. transfer to ice water. Drain and pat dry. Sautée with some butter and olive oil and at the end throw some minced garlic, shallots.. continue sautéing until fragrant.. and add chopped parsley at the very end. Serve :)

+Bruno Albouze is it the same pricedure if I want to cook them as a bundle with bacon around?
@pattypetronillemartin2608
8 жыл бұрын
+frederic r Yes it is, parboil until tender but not soft, I would say at least 10 minutes, depending on how fine your green beans are, try them before draining. Then make bundles and fry. Enjoy
If I do every step on the stove top first to brown the meat and such, can I do the oven face in a crock pot? Electricity is much cheaper than gas where I live. Thanks!

Very tasty but I have a question Can I replace the wine with something else for example some of grape vinegar ☺
@doncimaglia
8 жыл бұрын
no, grape vinegar is too acid and the taste isn't ok, I don't see the problem with using wine: you don't have to go expensive (no need to waste a good bottled of wine for cooking), and if you can't drink alcohol no problem either cause it evaporates while cooking buon appetito!

It would be good if you can put the dish original French name please. I tried asking for the ingredients in French but didn't receive an answer
Nice!
Awesome recipe as usual Bruno. But I recommend you remove the large annoying overlays. They detract from the viewing experience. A smaller overlay in the corner would be better. Thanks for everything you do!

+TheFerguscan Unfortunately it wont happen. I have been experiencing copyright infringement from online food blogs businesses which are growing like mushrooms. They basically steal video contents and reedit them shorter to exploit them freely. So, these watermarks will stay. Sorry.
Damn it!
Bruno you never speak about wine pairing. Pourquoi?

Bruno I love your videos, but when keeping the pot in the oven overnight without heat I would assume it would fall within the danger zone temp for a good amount of time...
how we can keep the meat over night in a closed oven ????? it will be a bombe of bacteria !!!!!!!

Looks great but may not for family. Took two days to eat it? Can’t wait that long at home. Love Gorden Ramsay’s receipe better which takes only about 3 hours total and taste great!
Oh mercy, his voice is too much, can't take any more of this nonsense.
