    Definitely trying this one. I am a short rib fanatic, and make them all the time (ox tails are another passion). This looks great. For cuts of this type, nothing beats low and slow.

    You are a proverbial badass. I just watched Wolfgang Puck, Gordon Ramsay, and other big names cover braised short ribs. NONE of them discussed the details such as removing the fat and preparing the glaze. You method is far superior. Do you like adding (cooked) tomato paste to the mirepoix? Also, it looks like you covered the meat in liquid but I was taught to leave about half of the meat exposed. Please explain if you do not mind. Love your channel!

    i cant tell if this is really good or not, it looks good and soft meat BUT any prime expensive meat cut is soft almost anyway you cook it, i would love to know if anyone has tried this, with more cheap cut meat, and it turned out soft and great

    It is fantastic, what you made. For a couple of years I've been braising at least once a week. Commercially, 50+ people. What I found with diced beef, is kind of waste of time to brown, with over 5 kg, What I do instead cooked on low for an hour, in its own juices, skim and remove once all gunk, fat and almost an litre of its water release. Than add the miirepoix, stewed separately just in 250 ml of beef stock, and wine (if available). 2.5 hours all later, is usually done.

    Bruno, could you expand on the differences with the beef cheek? the cheek you floured, salted and peppered before browning here only salt? I have seen this difference in many cooking books, including the french ones (although if I remember correctly Bocuse always floured?). Keep up the excellent work, truly enjoying it! greetings from Belgium. PS: no plans on including some beer in to your cooking?

    +Jan Vdw There are different methods out there indeed. Flour is not necessary.. If you want beer just substitute wine for beer.. that's simple.

    Is surely delicious. Only point is that it takes 3 days to finally bring it on the serving dish and diners eat it in 10 minutes .... They'd better appreciate each bite of it!

    Chef, this is just perfect! If possible, I have 2 questions.. What will be the benefit of making it in a dutch oven? Anything differs if I make it in a stainless steel pot? And is it OK to freeze the meat and thaw in the sauce afterwards? Thanks and cheers :)

    +Emre Ozer Dutch oven is perfect for braising. As long as your pot can sear meat well and is oven proof it should be fine. You can also sear meat using a skillet and transfer the all thing into a shallow dish and cover it.

    +frederic r Parboil them for about 6 minutes.. transfer to ice water. Drain and pat dry. Sautée with some butter and olive oil and at the end throw some minced garlic, shallots.. continue sautéing until fragrant.. and add chopped parsley at the very end. Serve :)

    +frederic r Yes it is, parboil until tender but not soft, I would say at least 10 minutes, depending on how fine your green beans are, try them before draining. Then make bundles and fry. Enjoy

    If I do every step on the stove top first to brown the meat and such, can I do the oven face in a crock pot? Electricity is much cheaper than gas where I live. Thanks!

    no, grape vinegar is too acid and the taste isn't ok, I don't see the problem with using wine: you don't have to go expensive (no need to waste a good bottled of wine for cooking), and if you can't drink alcohol no problem either cause it evaporates while cooking buon appetito!

    Awesome recipe as usual Bruno. But I recommend you remove the large annoying overlays. They detract from the viewing experience. A smaller overlay in the corner would be better. Thanks for everything you do!

    +TheFerguscan Unfortunately it wont happen. I have been experiencing copyright infringement from online food blogs businesses which are growing like mushrooms. They basically steal video contents and reedit them shorter to exploit them freely. So, these watermarks will stay. Sorry.
