Great list. I'm not sure id ever be able to decide on 2p but I've shamefully never played Ora et Labora something which I guess I'll have to fix right away. My other picks are similar to yours (Age of Steam, Medici are so good). I'd have Pax Renaissance at 3 but I haven't played 3 Kingdoms yet either.

Three kingdoms is not my Grail-game but my Grail-group. I have found one other player who loves it as much as me but we are struggling to find the third. Cant wait to play it more though.

10 players for me would be Empires (2017). If you didn't try that one, I would suggest you try it! Negotation and auction game for up to 10 players. Done under an hour.

Three player Churchill. Although maybe the Russians can win every game if they do not let the other players attack Germany. (there is card that lets them but Russia can stop it being played.)
