Tomato Pie with Michael's Home Cooking

Super simple to make this side dish. It's good! I saw this on the TV and had to try it.
Ingredients:
1 small onion (1/2 cup)
1 garlic clove
1 teaspoon dried basil
2 cans of tomatoes (14 to 16 ounce each)
1 and 1/2 cups cornbread stuffing mix
1/4 cup romano or parmesan cheese
Topping:
1 cup mayonnaise
1/4 cup cornbread stuffing mix
1/2 teaspoon Italian seasoning or more
1 and 1/2 cups cheddar cheese
Mix tomato mixture and place into your baking dish. Top with some romano or parmesan cheese. Top with your Topping Mix.
Bake 30 to 40 minutes till bubbly and cheese is a bit browned.
This tastes better and better with every bite that you take, and is great leftover as well.
You can make this in your pie baking dish, but it will not come out in pie like pieces.

    I've never seen or heard of this dish before but it looks delicious! I absolutely love that you used home canned maters. Nothing beats them for flavor! I gotta try this sometime!

    This is one of those things that is better the next day in my opinion. First time I made this, next time I will add a bit more mayo, the cheese was perfect. I should have bloomed the basil with the onions. This is a good way to have tomatoes in the winter for a side dish. Thank you Jason!

    I've made tomato pie in the summer with tomatoes from my garden, and pie crust. But never thought of doing with canned tomatoes and stuffing mix. Great idea, and looks yummy!

    OH MY GOSH ! Michael, I have not had this in so many years! My Mom used to make it and call it Stewed tomato's. She used canned stewed tomato's I will make this and add the mayo and cheese to it. Looks just awesome and my mouth is watering. It's 1130 at night, and now I want Tomato pie!

    It would have to be deep summer up here (Upstate Ny), for me to make it with fresh home grown tomatoes, but it looks like it would be good with good canned ones. Been a while since I was able to can, so I'm gonna try it with some San Marzanos. I think it will be great. Something to make when the grandkids come for dinner! Thanks, Mike.

    I remember when I was a little girl my grandma would make tomato bread... she would stand over the stove with a saucepan and I see my grandma taking a few pieces of bread that would be white bread and just tearing them apart in small pieces and then she would add one can of tomato sauce put a lid on it and she said it was poaching I loved the smell of it and when we got to eat it was like a pudding a tomato pudding oh yes the memories

    I have to say that I really liked this one Barb, it was my first time making it. It was better the next day. I guess the flavors married a bit more. Since I used some home canned tomatoes, I should have used some salt in it besides the small amount in the onions. Using all store bought tomatoes, I doubt you would need any salt.     I made this tonight but I couldn't find the corn bread so I used stove top stuffing instead. It is sooooo yummms. I threw a bit of corn in is as well for some extra taste. Thanks a bunch. I have a new meal now!!

    It does look very good. Kind of reminds me of a tomato side dish one used to see all the time. It was usually awful but I remember a couple of times having it when it was delicious. All I remember is that it was baked and probably used canned stewed tomatoes, torn fresh bread, and sugar. I don't remember any other ingredients. Seems like people just called the dish stewed tomatoes or breaded stewed tomatoes.

    My Mom never made stewed tomatoes with bread. Someone years ago fixed that in a pot on the stove and I liked it back then. I do not remember if there was a small bit of sugar or not added, but probably was. I remember she put a lot of dried parsley in it. This is somewhat different and actually quite good. A nice side dish of tomatoes in the winter. Thank you for watching Marc!

    I missed this. Looks great though. The mayo isn't something I'd do - maybe a bit of greek yogurt. This would make a nice side dish with roasted chicken or maybe pork roast.

    Well when I saw this on the TV, I was surprised about the mayo. I did not really measure the mayo but I suspect that I added less than a cup. The mayo really made this have a great taste to me. Thanks! ~Michael

    You canned your own tomatoes? *In Awe* Wow! Going to have to try this with fresh tomatoes; I bet eggplant would go well in there...oh, zucchini all mixed in. I'm a Romano type of girl. Good choice. :thumbs up: on this recipe.

    This recipe is very similar to what I've seen in North Carolina (I moved from OH to NC a few years ago). They do basically this same thing, except they put it inside a pie crust like chicken pot pie.

    I was a bit thrown by the mayo but I love mayo so.... Also I wonder if you could use toasted garlic Italian bread instead of the corn bread stuffing. I'm not big on cornbread unless its sweet lol Great recipe. I jar my garden tomatoes too. Always smells like summer when I open one up. :o) Thank you Michael. :o)

    Yes I believe that would work, especially if it is very dry like I used. Someone can use the regular bread stuffing mix stuff as well instead of the cornbread. I have to tell you that the mayo is really good with this. I did not measure the one cup of mayo and believe that I used less than one cup, but more would be better in my opinion. But worse for you if you are watching your fat intake. Thanks!

    How adding diced tomatoes that have basil oregano and fresh garlic I use them when I make your famous meatballs in tomato sauce..then I think I will try 5 blend Italian cheese with the rest of the topping ingredients..

    Ha ha ha ha ha!!! Uprated. Gotta make my typical type observation -- give this to a French person and they will likely run out the door! I think it looks fine, however, and I think it'd be nice with a poached egg on the side!

    Thanks! I think it is a good way to eat tomatoes in the winter as a nice side dish. Especially with mayo and cheese :)
