If you're in the mood for a hearty soup, this one is very filling as a main dish. It’s very healthy and vegan too! I used long grain brown rice which takes 45-50 minutes to cook, but you can substitute with quick-cooking brown rice and the soup will be ready in about 10 minutes! This recipe will serve 5-6 people, depending on appetite. If you have leftovers, it will refrigerate well and taste just as great when reheated. Recipe is below. Tomato And Bean Rice Soup
1 tablespoon olive oil
1 cup chopped onion
2 cloves minced garlic
6 cups water - Note: if using quick-cooking brown rice, start with 4 cups of water
2 cups tomato puree or one (15-oz) can tomato puree
1 tablespoon chicken bouillon base or 3 teaspoons instant chicken bouillon (3 small cubes)
1 cup brown rice, rinsed until water runs clear (if using quick-cooking rice, no need to rinse)
1 (15 1/2 oz) can kidney beans, drained
1 (15 1/2 oz) can chick peas (garbanzo beans), drained
2 cups frozen loosely bagged cut spinach leaf (or fresh spinach, coarsely chopped)
2 teaspoons basil
1 teaspoon oregano
Grated Parmesan Cheese (optional)
Let soup come to a boil first, then reduce heat, cover and simmer. Cook 45-50 minutes when using regular brown rice. If using quick-cooking brown rice, the soup will be ready in about 10 minutes.
If soup is too thin before serving, cook uncovered for a few minutes to reduce liquid to your preference. If soup is too thick, add more water one cup at a time while cooking.
