I work in a Korean restaurant and I wondered where I dump the liquid that’s form the plates because the drain is to small for me to drain when holding a dish carrier that the bus boys use .

can you explain further the ratio of the water in each basin. if i am to analyze, 3/4 full of hot water and basically 1/4 of it set for tap water? and in the 3rd sink, 3/4 full of sanitizer and 1/4 water? please enlighthen me.thanks anyway.

No, rather, you leave 1/4 of empty space so that some disturbance to the water doesn't cause the solution to overflow into the other sinks or spill all over the floor.

Instead of qued sanitizer we can use bleach water?

@@gajenbishnukunwar I work in a few kitchens. They didn't really point it out in this video but most of these things have a sticker on the outside showing where the water level should be.

my god, if you would just spray off the pans BEFORE putting them into the first sink, you would keep your water a lot cleaner.
