Although the kitchen is mainly used for the purpose of prepping and making food, it is just as important to maintain the cleanliness of it on a regular basis. In this restaurant, I try my best to perform kitchen deep cleaning on a weekly and at times biweekly basis

I worked as a cleaner in a small restaurant. It's hard work. This guy is amazing. It's hard work. I busted my ass. I got to the restaurant about 6am and I finished cleaning it all daily around 10:30. It's hard work, but I worked for a friend of mine who owned the restaurant. So it was a pleasure to help him and to see him have a successful business. I learned alot about working behind the scenes in a restaurant. It's super hard work. It's insanely busy and the pay isn't that great. It's not for everyone. This guy in this video did a great job.

Absolutely great tutorial for restaurant workers all across the globe..The host did a fantastic job at delivering a clean kitchen..Much respect given to this man for his work ethic...

@@jamesmarkham3173 for real, how you think I feel I work on commercial food equipment sometimes the floors never get cleaned and im laying on them behind a fryer gross stuff, I clean what I can to help myself and future techs but at the end of the day customers aren’t paying us $140 an hour to clean their equipment so it’s not really something we can help

Two suggestions. Where rubber gloves to avoid the chemicals breaking down like they do on the food gloves. Second I would suggest eye goggles to protect from the chemicals you're spraying. Other than that, this is outstanding, and I respect a business owner who gets into the trenches of their business and maintains proper cleanliness. Outstanding! Good job.

Yes i got the stuff slash back in my eye and had w small gouge in the white area for awhile. Washing eye w water hurts like heck as well
This was very helpful for me I started a deep cleaning job today it was a tough start . But I got the hang of it now because of your video . I was moving a little slow because I pay attention to detail to much when I clean

Steamers work great in kitchens too, especially those that steam and suction at same time . Great for commercial kitchen floors.

This is gonna be me in the morning usually I clean the whole pub and restaurant but they have asked me to go in and clean the kitchen tomorrow! so this has been super helpful and given me a starting point I’m just gonna go for it. hopefully I can get the stainless steel as clean as you have, it’s a big kitchen and I have walls and shelves as well to get clean I start at 5am wish me luck 😉

You really should get one of those pump sprayers that they sell to put garden chemicals in. Literally CHANGED my life! It is so much easier and faster to get the degreaser where you need it. Great job BTW!

The problem with that is that it is so hard to keep a kitchen clean constantly because they either don't care or don't have the staff to keep up with demand. I have seen kitchens get like it was at the beginning of the video within a week or two and most won't assign someone to do deep cleaning unless higher ups come in or health inspectors are due to come in. Even when I was a manager people won't do it and you are stuck doing it.

I shared this with my inlaws... They laughed and said waste of time and not money making activity. There a reason why i do not eat at their restaurant. They were so mad on chinese new year when i walked in with mcdonalds and at it there.

This is a restaurant I would eat at without hesitation. I wish employees would care enough at close out to do this to the point it wouldn't get to this point. Awesome video. I just started at a very small restaurant. I'm gonna be doing this to get it to my OCD standards. Lol. But great video.

also, the cleaner it is, the less disease carrying insects are interested in visiting or hanging around. Consistency, thoroughness matters, people who work half ass, & cut corners need not apply.
absolutely crazy to do this twice or even once a week. an invention waiting to happen

I just became a shift leader at a Pizza Hut whose walls haven’t been scrubbed in years. 3 weeks in and I haven’t gotten as far as I want but I’m getting one section clean at a time during each shift.

Best way to clean the filters is hot water with washing powder . It melts the build up in between the baffles and honey comb coils inside . Using just degrease and hot water only removes most of the exterior/surface build up of the filters .

We clean range hoods on pizza places. We dump microfiber towels on degreaser mixed with water and then buff the inside to remove the burned fats and oils. Then, I take a new microfiber towel, dump it in water and buff the surface to remove the chemical degreaser. BUT, what can I do afterwards in order to NOT leave any water streaks ?
I'm about to start doing this in Las Vegas plenty of kitchen steward work . Great profession if you pay attention to detail 👌 great money 💰 too.
not sure if ill ever make it to your restaurant but im sure the food is excellent given the care you have for your kitchen!

Just regular tools l used
I did that kind of job for 5 years until the pandemic broke out and the kitchens I used to clean closed or limited the access to my company after that I lost those clients. It’s a really hot place, and the floors get too slippery so you need to be careful with a fall. In my experience I used rubber gloves, googles, and mask because of the degreasers are made of caustic substances and other chemicals that may damage your lungs overtime! 5 hours is a good time for one person working on his own in the case of the deep cleanings and this type of design.

To prevent the smell of gas when it’s turned on and for easier use when needed as we won’t need to turn constantly turn on/off the central gas during operation.

when you are cleaning the wall and burners after you spray the degreaser, is it just Dawn soap and water? Also, what kind of steel wool sponge do you use? Does it have to be 0000?

Yup, only soap n water, l used scrub steel
And now I can turn to a drain-unblocking video to see where all the grease went ;)
Ballsy grabbing those grates like that I've had one slice through 3 pairs of gloves and damn near to the bone. Those things are razor sharp sometimes. Pretty much anywhere but the handles should be presumably dangerous to grab. Hope this helps someone.
Hey chef, at around 11:00 did you use any chemical or de-greaser on the stainless steel part under the burners? The range at my work has build up like yours that won't come off with a wet towel.

Hello, if you’re referring to the tray under the burners, I actually cover the tray with aluminum foil and change it on a daily basis, however, if you have grease build up that is hard to come off, I would use heavy duty degreaser (from GFS) - spray it, leave for around 5 minutes, then using soap, scrub with stainless steel sponge and rinse with water. Hope that helps!

Hello! No I didn’t dilute it, it’s pure degreaser out of the original bottle.
This brings back many memories. A lot of hard work, and if you want it done right, you have to put in the extra time for yourself. It sure looks great when it is clean! Thanks for sharing. How often to you deep-clean the fryers?
