    great job. one suggestion: carry around those plastic (or glass) bulb covers & put those on when a customer is missing them. Then just take them off at the end of your job. They're about $10.

    I was explaining to my wife why the floors were sticky in a restaurant she ate at. This takes me back to my wasted youth of being a late night Denny's waiter in Austin back in the 1990s. I remember telling customers, "hoods are being cleaned tonight, we're only able to serve salads, desserts and drinks..." Thank you for sharing your process...you guys have it perfected.

    So I'm a couple years late to the party. Just wanted to add some input about some of the things said about the fire system, as I do both hood cleaning and fire systems. Fusible links: these are temperature rated, and designed to break at a certain temp. Other than that, theyre good for about a 10lb pull on the line, not including a safety factor of a bajillion, so long as the wire crimp is installed correctly. DO NOT spray the fusible links directly for more than a quick second or two if you are using hot water. The pipe containing the link line for fusible links: contrary to what is said here, it is CRITICAL to spray inside the pipe, as grease will absolutely go inside the pipe, and may prevent the link line from moving. Automatic fire system activation relies on that metal line being able to slide through it. Fusible link brackets are required by NFPA to be mounted to the hood, and they're somewhat reasonably sturdy. *However* every now and then you'll see one that is either no longer mounted, or never was. Unfortunately they're often found smack dab in the middle of the duct opening. These you would want to be much more careful with, and perhaps not spray them at all, because I can confirm, it costs an arm and a leg for me to come reset a system. As for the system pipes: they rarely break. Sometimes if you're swinging off them or something equally stupid you could snap off a thread. But for the most part they're just about indestructible, and way tougher than you. Every hood cleaner/system tech has slammed their head/back up into one, and it can be the most painful and annoying part of the job. Every hood cleaners done it. If they haven't, they're either lying, or it's their first week. System nozzles: the only case you'd avoid spraying one is if it has a thin aluminum seal at the tip. Other than that, if you can see the hole at the end (if no cap) it's good to give it a spray , as the chances are that this hole is likely already plugged This is ultimately the fire guys responsibility, and some compressed air generally does the trick in unblocking them. But hood cleaners can do it much quicker by just spraying it off with the pressure washer, so generally that's what ends up happening. Dry chemical fire systems: not gonna go there. Ain't even touching that one with a 10 foot pole.

    I was cleaning the inside of my vent a hood, particularly the area where the lights and switches are, more specifically, the right hand light. I sprayed the area with a degreaser and now neither the lights or the fan will turn on. Any thoughts?

    Usually between 130 to 3 hours..I have accounts that we spend 10 hours on full crew.. all depends.. this job with 4 ppl is an hour. Sodium hydroxide diluted with water 1 parts Sodium to h20 in a pumper will take the thin grease off

    There *should* be no problems with any electrical hazards. All Hoods and ducts are required by NFPA 96 to be water tight and to be sealed as such using a UL300 listed device. So on a legit and legal setup, you can spray all you want wherever you want and not end up on the ground. But it's always very important to look at everything before spraying, and assess hazards on a case by case basis. I've seen a few people get put right onto their ass when they spray a faulty/illegal electric connection. Best of luck to you in the future!

    I’m not a fan of the drape style. It will still run along back wall. It’s not secured entirely. Can cause outlets behind equipment to short out. Try shims and tape

    Terrible! How many guys for a simple system? No discussion about the legal wiring, not after pictures of the system. Was NOT a straight vertical as stated! Sell globes to your customers before the job, always have a case with you. do not scrub stainless in a circular motion. Do not tuck hoods with rag fillers, compromising the chalk. There is no powder in fire suppression systems anymore. You are trying hard, but you gotta carry through 100% or you are no better than the next guy.

    it takes 4 man crew to get this job done? are you kidding me? if this kind of hood at this size, i can have a 2 men crew to get it done in 3 hours, and obviously, you are inexperience, because the most of the grease doesn't have to scrap it at all.
