Congratulations on the brew! I was never successful at beer (of course I didn't have that amazing set-up). I do however make amazing wines and meads. Got an incredible Cognac Mead i started November '22!

Now that is what I call a great St. Patty's dinner. The beer looks really good too. Who knows I might have to get back into brewing again. I love a pint of nitro Stout.

Should the corn beef be soaked in fresh water, after taking them out of the brine to get some of the salt back out?

Just rinsed well is fine. If you buy corned beef from the grocery store though definitely soak it!

My current grills and smokers are named Darth Vader, Obi Wan, Boba Fett, General Skywalker, and BB-Ate. The new Traeger’s name will be unveiled in less than 2 weeks on April 5th!

And to think, brisket way back in the day was the throw away parts or real cheap tough cut of meat for the poor folk. Now, it’s not uncommon to pay in the $100 range. 😳

Right? My grandmother and mother cooked brisket in the oven for that reason, and the ranchers and butchers in Texas started smoking them for the same reason. Now it's a delicacy!

@@BehindTheFoodTV it’s kinda the same story with pork belly. Relatively cheap, used for bacon. Now it’s gotten real popular with the BBQ scene, and thus the price follows. Supply and demand.
