    Interesting experiment. Butter browns faster so it might have a more noticeable flavor during the sear.

    Well, I see I was correct. Butter is better. Now all you need to do is take a 50/50 blend of tallow and butter. See if that gives you the best of both worlds.

    Great video! I guess it makes sense on why the tallow didn’t add a bunch of flavor, just enhanced the beef flavor. I thought the tallow would be the winner!

    I'm a huge fan of Rosemary as well as tallow but never thought to put the 2 together. How about butter and tallow? Good Stuff!

    Butter is better - there’s just something better about it in sooo many ways. Mind you I’ve not really cooked anything with tallow, uncertain of its flavour profile but melted butter on all sorts of things is always delicious, so was always gonna be a winner in my books Got some fresh steaks from the butcher today, will be cooking em on the weekend. Might put my cast iron pan in the smokefire for the sear

    Al, Great experiment! Brad from Chud’s BBQ is always using tallow spray. So I suppose the question now is: would butter be better on brisket too? I think Harry Soo tested briskets and said the best is pork fat! Keep up the great content!👍

    Everything is better with butter! Tallow will not burn like butter except if you use clarified butter. I never thought about using tallow either, so thanks for the test.

    Clarified butter can't be beat. I'll watch and see if you change my mind. As always, I'm looking forward to seeing it either way.

    Actually - you are partly correct. Clarified butter doesn't actually produce as good a Maillard reaction as full butter - those proteins and sugars actually do make a difference!

    The proteins and sugars in the butter make for a better crust - stick with butter Bobbi you'll be happier!

    Butter is better for flavor, Tallow is great to keep moisture in the meat. I've been known to put Butter on a brisket just for the flavor.

    Hi Stevie. Butter is actually better for searing than Ghee. While Gee (like tallow) is purified fat, it's actually the proteins and sugars in those milk solids that interact with the fat to make the Maillard reaction (browning) that makes for the perfect sear. Ghee would have produced the same thing as tallow - it wouldn't' have been as good as full butter. I hope this helps!

    I disagree. I don't use tallow in this way. Compare a basted steak in tallow compared to butter. That's how you use tallow on a steak!

    I baste as well but I don't see the difference. Whether you cook with it or drizzle at the end, the fat does not penetrate inside the meat, it just coats the surface. A lightly smoked tallow is also a pretty good choice.
