THE BEST KETO ROLLS WITH A SECRET INGREDIENT
There are lots of keto bread roll recipes on the internet, but many of them are not very good. They are either too cheesy, eggy or grainy. Plus they are flat and dense. But, don’t fray, I have developed a recipe for the PERFECT KETO ROLL. My recipe for the best keto rolls has a secret ingredient. This ingredient will help develop that classic bread flavor and work with the leavening agents to help these rolls rise. My keto roll recipe creates fluffy, airy rolls that are the closest thing you can have to your grandma’s rolls on the holidays.
In this video, I show you how to make these easy keto rolls in less than 20 minutes. Follow along as I give step by step instructions.

KETO BREAD ROLL RECIPE
(makes 12 rolls)
3 cups shredded mozzarella cheese
4 ounces cream cheese
2 eggs
2 1/4 cups almond flour
1/4 cup coconut flour
1/4 cup buttermilk or plain low carb yogurt
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
Preheat oven to 400 degrees. In a small glass bowl, add shredded mozzarella cheese and cream cheese. Microwave at 1 minute intervals until the cheese is melted and cream cheese has softened. If you don't want to use a microwave, melt the shredded cheese over the stovetop in a non-stick skillet and use softened cream cheese.
To a food processor, add remaining ingredients and melted cheeses. Pulse until combined. You may also combine the ingredients using an electric mixer; however, the dough comes together evenly and faster using a food processor.
Wet your hands with some water or oil in order to handle the dough. This will prevent the dough from sticking to your hands. Grad a handful of dough, form it into a ball and place on a parchment lined baking tray. Continue with remaining dough. You can form your desired size. Dough balls larger than 2.5 inches wide, will require longer cooking times. Evenly place dough balls on the tray spacing about 1 inch apart.
Bake at 400 degrees Fahrenheit for 13-18 minutes or until hardened on the outside and slightly firm on the inside. Let cool for 3-5 minutes before eating.

    I made two batches. One with plain greek yogurt and one with sour cream. The buns with sour cream were far tastier and not as dry. ❤ love these.

    @@marygaudet2-7 definitely I will let you know. The thing is that since I have the milk kefir grains and when I bake,if is written in the recipe MILK or YOGURT I always use home made kefir and the results are perfect.

    OH MY GOSH!!! WINNER!! I made a big pot of chicken and mushroom soup and really wished I could have some rolls with it. I found this and set myself to making a batch since I always keep these ingredients on hand. The only thing missing was plain yogurt, so I substituted our keto friendly cottage cheese. Absolutely AMAZING!! Soup with hot buttered rolls on a winter evening.... absolute perfection.

    I was so skeptical even after reading the many positive comments so I made half of the recipe which equaled 6 rolls. I am so glad I was proved wrong. I followed the changes from some of the comments below; I used sour cream because that's what I had, omitted the eggs and added 1/2 tsp of yeast because that's all I had left. Turned out great! I was very impressed and my husband who doesn't care for any keto or gluten free or alternative recipes said he liked this - to me that is a double win. This truly did look like bread on the inside. It's a little denser than regular dinner rolls but still soft and a delight to eat. I toasted it in a skillet this morning and it toasted beautifully, spread some butter and it was delicious!     Try Miracle noodles for spaghetti substitute. Nothing like it. Make sure you rinse them well and and massage in 1 T of vinegar or lemon juice to completely neutralize the smell. Rinse again. Now you can also enjoy zero carb pasta.

    Chaffles are delicious and the taste and texture is just like regular waffles. They can be used to make sandwiches too. Lots of chaffle recipes on Pinterest. The ones I like best are made with cream cheese, but there are recipes with several different kinds of cheese.

    omg .. these rolls are excellent. my batch yielded 9 rolls. i weighed the 1/4 cup buttermilk which was 60g. doing the math, each roll contained 7g or 7ml of buttermilk which my keto app calculated at 0.4 net carbs per roll. they are worth it.

    My sis and her bf came over and we had a cook out, we are all doing keto so I whipped this recipe up and made them bigger to substitute as hamburger buns and seriously these were so delicious. I did melt butter and spread it over the tops while they were cooking for the last 5 mins but I didnt miss a real bun one bit. Thank you for this recipe!!

    A further addition to this makes it even better. Add half a tsp of instant yeast to give it a bread smell, but cover the top of each bun with sesame and nigella seeds. Out of the oven it smells beautiful.

    You can make a Keto buttermilk by adding 1 Tbs of vinegar or lemon juice to coconut milk to a 1 cup line. Mix and let sit in fridge for an hour. This will also help cut down further on the carbs and works as a great substitution. 👍🏻

    I converted this imperial recipe into grams - using www.traditionaloven.com/ and their ingredient tools - and here it is: mozarella - 3 cups = 336 grams cream cheese - 4 oz = 113 grams almond flour - 2.25 cups = 216 grams coconut flour - 0.25 cups = 28 grams buttermilk - 0.25 cups = 61 grams Really looking forward to trying this out - looks delicious :) If anyone finds errors in my conversion, let me know!

    Following a suggestion made by @William Klein, I added the yeast to the yogurt and warmed the yogurt just a tad bit by placing the mixture atop the stove as the stove was heating up (I depended on the residual heat to warm the yogurt a bit), and it bloomed beautifully. Tiny bubbles began to form inside the yogurt. Once I baked my rolls they were extremely light! I've also noted that not allowing the rolls to get too dark on top makes them more supple (a light, golden yellow works for me).

    I make these regularly, and love them. However, a couple of weeks ago I accidentally left the eggs out. The result is a texture that is much more bread-like. I will say, though, that the first time I noticed no difference at all, save the change in texture. When I made them this week, it seemed that they had not raised quite as much. However, it could be that I handled the dough more that time, too. In any case, I prefer them without eggs because the texture with eggs seems to me to be closer to a crumbly biscuit, and I like the bready texture without the eggs. I should add that it’s important to use very fine almond flour to achieve this. I used Anthony’s.

    I prefer to keep my eggs for omelets or scrambles hence not using eggs here was something I had to try. I tried this recipe without the eggs after reading your comment and it turned out great! Thank you Cynthia.

    Thank you so much for making this wonderful video! These are really good. Instead of making 12, I made 6 larger ones to use as hamburger buns for lunch tomorrow. I also substituted the buttermilk/yogurt with 1/3 cup of sour cream. I also added 3 tbsp of light butter. I cooked them for 20 minutes using my convection setting on my toaster oven. They are super moist. I spread the half slice I just ate with peanut butter and they were great.

    I'm very thankful for the work you do. I've tried (as many others have tried) possibly two dozen bread substitute recipes. Almost always there will be 100's of comments about how "life changing" the recipe was. None have been very good - to me at least. Almost always they end up a waste. That being said, this recipe is one of the best. It's just a jazzed up fathead dough with buttermilk. You will be able to eat these without tossing them. These are not a waste of time. Plus they are really fast to make. My suggested additions : Add two teaspoons of Lorann's "Buttery sweet bread dough" emulsion to the dough. It makes them even more like wheat buns. Add a teaspoon of instant yeast to the buttermilk and let it sit for 10 minutes before you start the recipe. ( this will not make anything rise but will add yeast flavor)

    I am more inclined to trust this comment as we have had such similar experiences. I have attempted so many keto breads with hundreds of comments expounding on how amazing the breads were and I was always left disappointed or wanting more.     I just made these to go along with a bone in rib eye roast...... You were 100% right they are phenomenal...... I opted to use the Greek yogurt instead of the buttermilk..... I will point out that 1 recipe I have calls for buttermilk but it specifically Said to put lemon juice in almond milk or your nut milk of choice... And let it set for 5 minutes to make your own keto version of buttermilk... I just wanted to comment about how amazing these are we are now getting ready to eat lol had to try one of those rolls.

    I made these today and heated the buttermilk adding 1/2 tsp sugar and 2 tsp yeast. Believe me, the sugar got eaten up by the yeast, I wasn't real fast making this and the yeast buttermilk mixture came up and out of the cup! Great flavor, this will be a staple in my kitchen.

    I would leave in the baking soda, it aids in browning. The rolls may be colorless without it.

    I just made 1 batch using the greek yogurt ! Amazing delicios ! The yogurt was the trick for a good moisture . I BAKE HALF IN BALLS as you did and tge other half in a burguer bun tray both came out delicious ! Thank u for sharing !

    I have heard, haven't tried it yet but, if you add a teaspoon of yeast it gives a flavor that can satisfy a true bread lover. I'm one of those that feels my day is completed by the aroma of fresh baked bread

    These were so delicious!!! Mine came out quite dense though... if you’ve ever had, say... a popeye’s biscuit? That’s basically what these rolls felt like to me lol. Same super dense, heavy, filling texture. Very heavy which is not terrible but I wanted more of an airy bun... i am considering splitting the egg yolks and whites, beating the whites until fluffy before combining with the dough, and also adding some yeast with a dash of honey to make these guys rise and become more like a fluffy bread? Has anyone tried something like this before 👀 guess I’m gonna have to experiment!

    These rolls were perfect. A mix between a kfc biscuit and cornbread. Tender and bread like. Not like cloud bread at all! I kneeded the dough by hand because it gobbed up my food processor and was awful to clean up too. So after microwaving just add dry ingredients and kneed a little then add eggs. Great recipe. Thanks!

    I am very particular about my bread and I have to say - mind blown! These are so easy to make and are delicious! Mine had a biscuit texture, which was fine but I wanted a "bun" - I sliced some open and placed them in my air fryer (inside facing up) and let them go for 5 minutes. I ended up with the perfect slider bun for my burger. Thank you!

    Hey Annie! I wanted to make these for Thanksgiving, but ran out of time & totally forget them. So tonight, I decided to do it, but discovered after I'd mixed it together, that I used the WHOLE brick of cream cheese. Not wanting to toss expensive ingredients, I omitted the yogurt (my choice was going to be sour cream), added more almond flour -- 1/4 - 1/2 c. Also, I put in 1 tsp baking powder, thinking it was baking soda. Recipe made 14 & I gave them 15 min + 2 min more. I'm surprised that I have rolls. It's a very forgiving recipe! Thanks!!

    I agree! I'm glad you both liked the roll recipe. I love them when they are fresh out of the oven. They freeze well too. I've been freezing them baked. When I will defrost or let sit out until thawed. They are perfect with keto soup this time of year.

    Just made these and they are so good! Love the texture. They feel and taste like regular rolls. Very soft and not dense. Made mini sandwiches with them and very satisfied. I’ve tried many other recipes for keto bread and these by far are the best! Ty!

    Just made this and it’s spectacular. Had no mozzarella so I used Gouda and Havarti cheese, along with the cream cheese and I also used sour cream. It was very wet and sticky so I added a little more coconut flour. I tried using oil at first but switched to the water and it worked better as the dough was still very sticky. It was easy to make smooth round balls and rinsing hands’s after each ball. 17 mins 12 buns buttered as soon as the hit cooling rack. Thank you so much for this video best Keto bread I’ve had yet.

    I made the recipe with the Greek yogurt. For my first time …. I was impressed ! I don’t have a food processor, I tried my blender but it didn’t work well so had to take a little time to mix it well. These rolls are really easy and very good 👍🏼

    So i figured out a seeded wheat like dinner roll that LITERALLY has the texture of bread. You wouldn’t even know there’s cheese in it. I used your recipe but replaced a 1/4 of the Almond Flour with Natural Almond Flour and added 2 TBS of powdered Swerve and 2 TSP of Xantham Gum. I brushed the tops with butter and did a heavy handed shake of Everything Spice. Soooo good.

    Why not use yeast at least for taste?? JUST MADE THESE ROLLS! Excellent!! More delicious than ANY Bakery must less a store! DO TRY these even if u think u don’t need to eat keto. SO GOOD! I did use sour cream and baked for 15 min. Is there anything bad about eating a bite of “raw” dough?? Mine were very moist! I hope they weren’t raw. No eggs so figured it’s ok. Thank you very much! I needed this recipe!! It’s hard to drop bread cold turkey 😵‍💫 I also added 1 tsp of powdered chicken bouillon. It just added a little flavor that was good w/o knowing it was bouillon. These are filling. Satisfying.

    I just made these and its an awesome recipe! I added 1 tsp of regular yeast for flavor, not rise as I do in all my keto breads. The smell and flavor of yeast makes it more legit!

    When you said that mozzarela replace gluten chewiness I had eureka moment, In old days when I practised beauty therapy we used for hot masks before removing all the black heads , finely blended linseeds ( flaxseeds )mixed with boiling water and mixed till it was that consistency, the more you mixed the more elastic it becomes. I just used it plus yogurt . The smell was amazing and they taste exactly like brown rolls, so filling, plus it is sooo good for your gut, and everything..try..

    I got in oven now. Smells great. Made into little French loaves for a Italian beef. 400 for 25 min and then 375 for 15 min. Covered with foil not to get too dark or burnt. Dense but smells great. Excited to try...

    I used Greek jogurt and dry buttermilk with my dry ingredients and follow your recipe it smell so good, that is what my husband said. He went into the refrigerator to get his homemade biscuits and got bad, so he took 2 keto rolls and said quite good. 👍👍👍👍👏👏👏👏💓 it passed the non keto eater.

    So I replace the almond flour with macadamia nut flour and it is perfect for me. I have been on keto for 2 months. I have been trying to find a bread recipe that I could enjoy. This was it. I liked the original but I knew that the almond taste was not doing it for me. Once I switched them, this is now my holy grail. Finally, I have done rosted garlic and brie, grilled cheese, etc...     So I make it my own. I pulse up some of the nuts in a food processor. If you leave it on regular speed, it turns to butter quickly. Quick question, how do I make this recipe into a loaf?

    Add some yeast, it wont effect the rise because it needs sugar to rise but it will effect the smell and flavor!

    I heard if you use a small bit of honey to feed the yeast the yeast eats all the honey and no carbs are left. Not sure how true that is but then the yeast prob won't rise almond/coconut flour any way so I guess why bother.

    Just made hamburger sized rolls (6). Warm, fresh out of oven they are great. Final verdict after two days and eaten cold. Used sour cream instead of buttermilk. It would be helpful to use gram weights for things such as flour. I used 12oz of solid mozzarrella cheese which is 3cups according to package, but is too much if shredded. They still tasted great.
