    The problem could have been that your freezer is not set to be as cold as the freezer of the person who designed the recipe, so 15 minutes would have not been enough time to chill the dough. The chilling of the dough is the crucial step to stop the crackers from losing their shape in the oven. I recon you girls should freeze the dough for 45 minutes next time. It would be cool if you girls would try again with a properly-chilled dough, because it would help you learn the proper technique for future recipes, and the subscribers would be quite impressed if you managed to solve the problem.

    Tips you may find useful : 1) use a light dusting of oat fiber when rolling them out. It's pure fiber, and helps lower the carb count, plus zero calories, etc. It also helps lower moisture content and makes finished product a bit 'crunchier' 2) does the food processor you used have a grating blade? If so, use it! 3) don't throw out the 'fails', let them cool and they're like those store bought Whisps. I break them up and use as an alternative to croutons on my salads, etc ...yummy! 4) even easier, just roll the entire thing flat, give it half the baking time, remove from oven and score/cut, then finish baking. Let me know if you try any of these tips!

    Amazon has a silicone mini fish mold. It makes 112 fish at one time. Put the dough in the mold and bake it.

    That’s the ticket, I think. I put Parmesan from the store in the little silicone mini cupcake pans. One minute in the microwave produces wonderful crackers as good as Whisps.

    Friends: you have a food processor! Most food processors have a shredding attachment or wheel - use it to shred your cheese! Save your fingers, and speed it up for yourself! :)

    The butter was your nemesis. You can simplify this recipe by just using almond flour, spice/dried herbs, parmesan cheese and water, 2 cups almomd flour, 1-2Tbs seasonings/herbs (combined) and 2-3 Tsp water. Knead into a dough. Roll out to 1/8 inch thickness. Cut and bake in the microwave at 30 sec intervals until the dough is crispy, usually 2 min total. Let cool 15 min before eating. They'll be at their crispiest. Add cheese for a higher protein snack, if you wish. You can make many variations of this dough--plain, rustic, Mexican, savory, Italian, Asian, etc. Let your imagination run wild. And a trick to prevent your dough cutter from sticking to the dough--keep dipping it in almomd flour to coat it, or lightly grease it between cuttings. 🇨🇦🥰

    When using a cookie cutter girls, you should flour the cutter before you press it into your cookies each time. Because it's keto, I would recommend using either bamboo fiber or oat fiber to dip the cookie cutter into. This won't add any calories or macros.

FYI, I made some great Cheez-its knockoffs by using lupin flour, cheddar cheese, a little baking powder, seasonings, oil, and warm water. I bet that recipe would make dynamite goldfish crackers!

    Thank you for testing those. I was hopeful but glad to know not to bother making them. The best keto cracker recipe I have found is by The Diet Chef. Uses 1/2 cup almond flour, 1/2 cup parmesan cheese and a little water at a time until it makes a dough. He makes them in a food processor but I did them by hand and found it less messy and easier. I have also made them with Victoria's 2.0 keto flour. Mix them up, roll them out between 2 sheets of parchment, cut with a pizza cutter into bite size pieces and cook in the microwave a minute at a time until crisp. Once done I spray with avocado oil and sprinkle with everything bagel seasoning. So good 😋 You should try it 🙂

    The trick to using the grater on its side is to put it on a baking sheet and push against the edge of the sheet. It makes it much easier!

    You need to loosen both papers from the dough before punching out. You may also put a very light spray of av0cado oil on the paper too. Good luck!

    about creating small pieces - the simplest thing that works for me is to roll the dough (or just press it thin with wet hands), baking for several minutes, then cutting with a knife, then continue baking

    Hi, girls! Just to risk redundancy, your food processor will likely have a disc for grating cheese and other foods. The whole brick will take about two minutes. My Cuisinart processor grater zips through foods in a flash. Best Dishes! Patty in New Hampshire!

    I don't know if it was a complete fail, I think maybe someone with a lot more kitchen experience could have been of help. Like my food processor has a shredder blade, maybe yours doesn't. Also, after you firm up the dough you might want to treat the cut outs like sugar cookies and cut away the excess dough from the shaped dough. They may not taste any better but you might have an easier time with your next recipe. Thanks for trying all these things.

    Ok, I thought about this. When I make cheese crackers for my dogs, I score the dough with a knife before baking. After it bakes, it's so much easier to break into little squares. I'd try this recipe again. Leave the water out. You'd want a drier dough. Roll the dough and score it with the fish template. Don't pull the fish out. Bake as a whole piece. That might work better for you.

    I use my box-grater with the bell on the cutting board so you shred downward. I use this for my cauliflower! it keeps it tiny and dry. makes the best fried-'rice'. Also I like the grater for shredding cabbage for coleslaw. I use a little horseraddish to the mayo, applecider vinegar and a pinch of sweetener! let it sit overnight for perfection. I also like the fine shredd for keto eggroll in a bowl. I grate half a cabbage, 2 carrots, half an onion, stir in 2 eggs and fry over medium heat, top with soysauce and seseme oil. +or - meat of choice. Ground pork is best with lots of fresh garlic and ginger

    if you add first almond flour, xanthan gum and optionally baking powder to the blender, blend it to mix, then next you can add big pieces of cheese and blend, and it will be crushed very nicely, so no grating is required. I prepare the fathead dough this way, adding the third blending after adding an egg there

    I expect you need that water for the xanthan gum. It has to be hydrated, and there isn’t enough water in the rest of the ingredients to make that happen. Letting the dough sit for 15 minutes is for that.

    Gotta oil that parchment too: ever so slightly to reduce breakage during lift off..., and, even the tool needs a little bit more spray so they slip out better and preserve their shape....

    It will really help if you peel off both sides of the parchment paper before cutting them out. So peel off one side and set it back over the dough then. Flip it and pull the other side off and then put it in the freezer for a few and then cut it.
