    I really love these talks about health. I was having digestive issues for 12 years. I went to a specialist and she asked me to stop dairy and Gluthen.     I had to go GF 3 years ago. My symptoms were bloating and some pain and my face broke out w red splotches across my nose. I made a dermatologist appt right when Covid happened. So I met w her on a zoom call. She looked at it up close and told me immediately that it was a gluten sensitivity. And she told me exactly what to do and where to buy some foods. it took me several months to learn what things had wheat in it. But I am so much better now my face is clear and I am working on my gut health and just doing so much better overall.

    And yes! I have a sensitivity to dairy also. 😢 I still eat some small portions of butter and sour cream and Mexican cheese on top of Mexican food if we go out. I am doing so much better!!!! It’s been 3 years now that I’ve been GF and DF.

    Thanks Myra. I can no longer eat grains and what a pain! The ancient grain that mankind has not manipulated is Einkorn. According to the research I've been doing, people who can't tolerate gluten and/or wheat CAN eat items made with Einkorn flour ... especially if used as sourdough. I tried to make sourdough starter with coconut flour but it didn't work. It did form hooch liquid on top but no bubble action and it did grow mold. I didn't really expect it to work, but I miss bread so I'm trying to think outside of the box. ~ Blessings and thank you for all of your videos!

    This video is eye opening for me. I have everything you are mentioning here. I gave up cow's milk and my heartburn stopped but I have year around allergies, inflammation, HS etc. Breakout in my head, constipation and Diabetes I had enough. 🙏

    Your allergy to gluten is an autoimmune disease called celiac disease; we can't digest gluten - wheat, barley, and rye - as well as sugar and some dairy The Itchy patchy skin is called eczema. It flares up, itches and spreads in hot weather and/or diet change The allergy test needed is an upper GI. And then you can go from there with the doctors you'll need. Listing to your story has encouraged me to purchase the vitamins you take. Thank you so much for sharing.

    It is the type of wheat Myra. Einkorn flour is supposed to be more digestible. They sell it at some high end grocery stores.

    I had the same issues! My dr told me to cut it out without testing me for it. I did end up feeling better without it. Went gluten free for about a year. Ended up with leaky gut from it unfortunately, which I'm trying to get to the bottom of. For anyone who doesnt know, einkorn wheat is actually a chemical and non gmo form of wheat (the only one, actually) and is tolerated by people with gluten intolerance. I am super reactive to normal wheat, but I'm fine with einkorn. I also gave up cow dairy for the most part, and found i tolerate goat dairy. But i used to take excedrin just about everyday and have horrible joint pain with horrible pmdd. All that has mostly gone away since cutting out wheat and cow dairy.

    Iriskoomy-Thanks for sharing but the Dr needed to have given you a blood test and then a colonoscopy to ensure. Glad that you spearheaded this and found relief. I too have celiac and leaky gut but I found relief in eating small portions and walking after a meal plus drinking more water. Wishing you health and happiness in this journey.🙏🏽

    I have been eating homemade sourdough tortillas , biscuits, bagels, bread and sourdough chocolate cake, instead of store bought. I started 5 months ago. I made my sourdough starter and it’s so easy! So many channels will over explain the process or make you think you have ruined it by measurements but its ridiculous. I have the channels for you to go to for the best recipe’s! First go to “ damm delicious “ for the sourdough biscuits, you will never want to eat a biscuit made another way! On this recipe😢 I use 1 tab sugar and 1 tab honey. Thats the way I like it. I also make the dough real wet , by adding more buttermilk and lay it on floured surface and fold 4-5 times only, which makes tons of layers. For the cake, cookies breads, I used “sourdough daily”. She has absolutely the best! For the bagels that taste like copycat panera cinnamon , I googled that copycat. Anyway sourdough just breaks the enzymes down so your body doesn’t have too! I will have to stop the store bought pasta of any kind and make my own because I flare up. We have emulsifiers and awful things added to our foods. I hope anyone reading this would just try it. It doesn’t taste like sour, it tastes like the best flavor you have been missing! Tip: do not over ferment, or it will taste too sourdough. Go by recipe’s.

    For people like the KZreadr myself, we cannot even have what you have suggested homemade. I even have tried organic Italian flour in other countries and it still gives me the same reaction. Also for a lot of people it is not just the gluten but also the proteins in the bread that our immune system is fighting. Please watch out for this advice because it can really hurt you for someone who is extremely sensitive. Clinton isn't the only thing in wheat that our immune systems trigger.

    I was dealing with IBS for a few years and for the past 4 months I’ve been on a carnivore diet. I have never felt better. No more bloating, no more gas and I’ve lost 15 lbs. I ate a couple of times something with wheat. The other day it was chicken wings from a restaurant. Big mistake. It immediately had an effect on my gut and it wasn’t good. I will eventually experiment with other foods like rice and potatoes maybe even some veggies, but I’m quite happy to continue with the carnivore diet. It’s a great elimination diet.

    That happened with me - We visited Europe from Australia and in many of those countries I didn’t have the same effects if I ate any of their bread products. I also do not have problems in Vietnam (perhaps it is the French influence or maybe they don’t use a lot of preservatives as their bread is it fresh and does not last as long as some of the bread products here in Australia which give me stomach problems).

    Yeah, I have some sort of wheat or gluten sensitivity. I get very constipated and awful heartburn I can’t seem to get rid of until I make a bowl movement. I also have sinus issues when I eat certain dairy. I’m cutting bread out completely because I’m sick of feeling sick!! Oh I also started getting this weird patch of skin that was warm, red an irritated when I ate bread.

    Because the wheat in America is hybridized wheat the content of gluten is too high that's why a lot people have issues and a lot diseases. I switch to italian wheat einkorn and whole grain spelt and my bloating dissappear. I make my own bread and flour tortillas my family love it❤. There's a documentary on KZread. What's with wheat Is great info. I can't give up my bread 😊. Great videos Mayra 🎉❤❤

    Almonds mainly because I thought they were healthy. I'm sure they are unless you're sensitive like me. I used to eat dry roasted peanuts but I get extreme inflammation from them. I was so bummed because they were my "go to" snack.

    First off Thank you Mayra for doing these talks it is really helpful ESPECIALLY for someone just starting out on Keto/GF fasting ETC....I took one of those tests for Allergies and also am sensitive to a number of things....My Dr. said also that if you stop eating certain things like sweets and bread for a long time and then eat it your body will react sometimes like yours did to a bad experience. I was on Dr. Davies Wheat Belly Diet for a long time (2007-2017) and went down from 220 to 131 and then moved (2016) to NC stuck to it until Covid then gained and was experiencing what you described (went to 175 and suffered) I have Lupus and was very bad with inflamation THEN last year my hubby (psoriatic Arthritis +) and I dicovered and researched all this Keto Intermittent Fasting etc and we both committed to it 18-6 intermittent fasting and supplements etc I take SEED and ZERO stomach issues thanks to you I drink LMNT, take AMRA and with your recipes and others I have reached 115/116 pounds. I have a sensitivity to certain Whey things so I stick to alot of certain plant stuff (coconut flour, flax, coconut milk ) but I can eat A2A2 stuff and not suffer. My Husband cannot have almond flour so baking sometimes is challenging. SORRY this was long but I just really love what you do and share I have made SO MANY of your dishes and I am having today (Lent, Fish Friday) your sushi in a bowl Thank you Mayra...Julianna Raleigh, NC

    The problem with the wheat that is used in most breads is that it's a genetically modified version. If you look for einkorn flour or other heirloom wheat varieties of flour or products you may be able to eat those without issues. Einkorn wheat has only 14 chromosomes but modern wheat has 42. They have changed it so much it is no longer digestible for most people. Even if people can tolerate it now it oftentimes leads to issues as they get older. Essentially we're not eating real bread. Einkhorn is somewhat difficult to cook with as far as making bread. It's a learning curve. There are recipes out there or you can buy loaves of it online. I personally love it and I make homemade biscuits and it makes the best gravy.

    Today, I'm starting a sugar detox including going gluten free. I've developed GI issues (Crohns 17 yrs ago at 24), seasonal allergies at 20 that now areyear round, and skin allergies to fragrances and essential oils. Additionally, I went completely dairy free within the past two years. I'm switching to preparing my own meals with whole foods. I know this will be very challenging, but if it can at least reduce some symptoms then it'll be more than worth it. By the way I'm what some might say as thin on the outside, fat on the inside. People will look at me thinking I must be healthy, but the view from others isn't always the reality.

    So here’s my gluten story. 12 years ago at the ripe old age of 60 I was diagnosed with Celiac disease. No GI distress symptoms, but my H&H was really low with no obvious signs of bleeding anywhere. So off I go to have not one but TWO endoscopic procedures (one up, one down). And low and behold! What does my extremely talented GI guy find???? That all the villi that stand up as nutrients wash over them during the digestion process are (and I quote this brilliant physician) “are laying down like a bad shag rug from the 70’s that has never been vacuumed “ ergo, not absorbing nutrients like the iron and folic acid I needed to create red blood cells and have a normal H&H! GI guy ran some blood tests that confirmed along with the biopsies he took at endo that I did indeed have celiac disease! Never had the bloating, discomfort, diarrhea etc that people usually experience. I was perfectly happy eating baguettes slathered in butter, but no more! Also no more iron deficiency or anemia, so I reckon it’s a pretty fair trade 😂 .

    I'm in Australia but I'm Italian from a family of chef's & cooks 🇮🇹 We make our own bread, pasta, pizza etc from scratch & with good quality ingredients from Italy. I never have issues, when I've been back to Italy also no issues.... But when I've eaten those foods out with friends here in Australia I have had issues that you described. I have friends & 1 family member who have intolerances/allergies to gluten but have been able to eat it in Europe. In Italy pesticides, hormones, any chemicals/additives etc etc are banned 🚫 Never have been used.

    25 years ago, I had all these symptoms. Gluten allergy is VERY serious. I’ve been GF and feeling great! BUT, I gained weight due to all the delicious GF foods. Now I’ve been Keto friendly for 2.5 years and feel even better. Lost all that weight. I am lactose intolerant, have a shellfish allergy, asthma, and osteoarthritis in which I’ll need joint replacement. Removed my gall bladder as well! Love your channel and your spirit! Keep doing what you are doing!! 🥰

    I learned about wheat sensitivity ten years ago. I worked through the elimination diet for 3 months. It was so hard! I learned that I could not digest anything with a high fiber content. I can now eat rice and corn (a little tiny bit) every once in a while without adverse effects. It’s been a long and hard road. I also (finally) found a functional medicine doctor who tested my antibodies. My MD tested my TSH (thyroid) levels. Since they were (and still are) fine, she didn’t investigate further. The naturopathic medicine doctor found that I have antibodies for Hashimoto’s that were at levels out of this world. I’m sorry you are dealing with this, but I am thankful you were tested and now know.

    I had acid reflux , stomach pain, IBS for years, I took omeprazole for years, after a lot of testing I found out I had a gluten intolerance but not celiac. I also had a hiatal hernia. After 5 months of going gluten free and keto I had an xray done and I no longer have acid reflux, no more stomach pain, no more IBS and my hiatal hernia is almost gone. I’ve had 4 endoscopes done and every test known to man. I’m having a colonoscopy this month so they needed an X-ray to see if I needed an endoscope done and I do not. I’ll never eat gluten again.

    So glad I found this video. Been having severe bloating but recently had random rashes/bumps on face, specifically cheeks, eyelids and nose. Nothing is helping and I told my doctor I think it’s gluten and she said no. She will do a series of allergy test but none includes wheat so I will ask her to test for it. I’m up for a challenge, please do it!

    I can really relate to your experience. I’ve had a similar experience. The only thing is that it is so hard for me to give up dairy. I have so many food allergies and sensitivities that I pick and choose what I need to give up. Gluten is a bad one for me as are tree nuts, so no almond flour or anything with gluten. There are other things that I am sensitive to that are easy to give up but just not dairy. 😊

    I’ve lost 120 lbs (VSG) about 9 years ago and follow a Ketovore or carnivore WOE. 6 months ago I started to do a daily 5 mile/1 hr fast walk. I wanted to drop 15 Lbs of regain and wasn’t losing anything so added a few off plan foods to try and boost my metabolism. My digestive system threw a fit and I was down, in pain for almost 3 days. I’m currently doing an 8 day egg fast and feel normal again. I can eat wheat products in Europe as well but still don’t overdue it.

    We've all heard over and over how people go to Europe and they never have a stomach ache. I have experienced this myself in Athens and the Island of Crete. Instead of us all having to figure this stuff out on our own it sure would be nice if our government would fix the issues. Or if SOMEONE who knows would inform us of what the heck is going on.

    I have been gluten free since 2007 I have celiac disease and gluten causes a lot issues for me I cannot have wheat, rye, or barley which all contain gluten and the problem with gluten free foods is they are higher in calories and have more sugar from the ingredients used to replace gluten. Sourdough isn’t safe on a gluten free diet and you can make gluten free sourdough.

    Thank you for sharing this. I am too the same. I feel like I'm going to explode from the bloating i get from the garbage. If you do decide to ever make sourdough could you share the recipe with us!? I'm low carb but i still indulge once in awhile and i been wanting a good quality sourdough.

    I enjoy all of your videos, but this one really hit home. I have the exact same issues. I had to give up wheat and dairy also and it made a huge difference. However I have found I can have some natural cheese, not processed, and homemade sourdough bread. I discovered this because my daughter started getting into sourdough bread making and I ate of piece. NO reaction! Thought it was a fluke, but no, it didn't bother me. I have also found that if I stick to whole foods I feel great. So, thanks for sharing. By the way, I'm up for the challenge!

    THANKS FOR SHARING - grains can really mess with some people's systems. Yes Im one of those, tested and diagnosed highly sensitive to gluten, and strangely also highly sensitive to night shade vegetables as well 😂😂 Ever tried to find recipes that don't contain those items 😵‍💫🤔🧐. If you decide to take this challenge, I and many of m% acquaintances are Here with you - you are supper creative, so our fi ders are crossed you will be able tomhelpm. 🥰🙏🏻👍🏻👏🏻❤️🙋🏻‍♀️😋

    Bread makes me feel pregnant and my allergies suddenly disappeared as I’m mostly dairy free. The benefits of this lifestyle are amazing! Thank you for sharing your experiences and teaching me a thing or two along the way. I’d be totally down for a challenge. God bless ❤

    I have the same reaction to gluten. There are so many gluten free products that are so good I don’t really miss is. I’ve tried the sourdough route and that didn’t work for me at all. Trader Joe’s gluten free bread and even English muffins are great. I’ve also made my own bagels with a flour called cup4cup and they are seriously fantastic. I use that flour with recipes that call for wheat flour and everything comes out amazing. It’s not low carb but nice to have something on occasion.

    My doctor recommended cutting out gluten to help my thyroid about two and a half years ago, and I pretty strictly cut it out for a while, then I started adding it back in a little bit. When I did my own organic sourdough, I could handle that, but anything else would give me HEADACHES and MIGRAINES which is a lesser known symptom. I still do have a bite of stuff every now and then which it seems I can tolerate, but I do feel so much better when I'm free of gluten.

    this happened to me as well. I was on Keto using Keto Bread and having the worst bloating and pain and i didn't think about it at all. Someone asked me if i was sensitive to gluten and when i looked back at all the packaging on the Keto Bread, Keto Wraps, it had those modified items in it. Gave that all up and my pain went away. I have to read all labels and if it doesn't say Gluten Free, i can't eat it.

    Read a number of comments regarding problems with dairy as well as with gluten. One of things I learned about 25 years ago when I found out I couldn’t tolerate wheat. Basically had to go on a gluten free diet since wheat is the primary source of gluten. At the time, I was also having trouble with dairy. The doctor I saw at the time was very knowledgeable about dietary/digestive issues. He told me that dairy products need the same villi in the intestines that are affected by gluten. Once they are healed by avoiding gluten, you may again be able to eat dairy without problems. (No promises here because you may also have a separate dairy allergy.) Because I’d had problems for so long, he suggested avoiding dairy for at least a year - hard cheeses excepted - before trying again. Marked my calendar and had my first 1/2 cup of chocolate milk a year later. No problems. As I am keto, I don’t drink much milk for carb reasons, but having dairy is no longer an issue.

    I have symptoms of gluten sensitivity and always break out in various places,mostly on the arms & legs. Also the red blotches on the face. I’ve gone gluten free but sometimes if I’m super stressed will falter & eat gluten. I try to keep gluten free “junk food” so I don’t cheat on gluten. There are so many great gf products, I don’t need to do the gluten version anymore.

    I have celiac disease. We are so lucky stores carry tons of gluten-free things these days. I do feel like it's not fair, though, with how over priced gluten free products are. We should get a tax break! ❤Oggi pizza is the closest thing to what wheat pizza tastes like. Grocery Outlet usually carries it. I'm not sure if you have one in your area, but try to find that brand. ❤🎉

    Hi @Low carb I have been gluten free 4 years now and this 2024 I am now a vegan too. I lost weight too from uk size 20 to uk size 12 now and I do workout too. I really enjoy gluten free food now and I love my body too. The advice I get give is never to buy gluten free food or snacks etc from amazon for I bought cookies that say they are gluten free on the box but they contain wheat I felt tummy ache after having one cookie only to find out they contain wheat but it doesn't say on the box.

    ive had digestive issues for many many years and couldnt figure out what it was. Constant Dia..poo poo.. and then it came to head when i ate spagetti i started vomiting . pizza, noodles, cup of soup, flour tortillas became a no go with me. I would vomit and purge the other way for the next following 4 to 6 hours post gluten consumption. I cant do it anymore but it aligns with a low carb lifestyle and works for me. Glad you recognized as well gluten isn't good for some of us

    You may have been reacting to the glyphosate (roundup) that they spray on the wheat crops here that they don’t in Europe. Additionally, you may want to be tested for celiac disease. If you have it, you won’t be able to have any gluten - wheat, rye, barley or spelt. Because it will damage the villi in your small intestines which could lead to a host of health problems.

    Allergies come from lack of probiotics as well, when our gur bacteria is not healthy can give us allergies. Drinking a lots of kombucha and kefir

    @lowcarblove I have been subscribed for years, got off low carb for couple years. Back for 11 months. 2 months ago I introduced Keto “certified” crazy expensive bread and tortillas in my diet. I can’t remember where you stand with those. They are wheat but do you agree low carb acceptable
