It sounds like the perfect setting to recreate the iconic salmon with sorrel dish, just like the Troisgros brothers did back in 1962. Saumon à l'Oseille;
140g of salmon (4 pieces, ish)
80g fresh sorrel /spinach
4cl =3 tbsp sauvignon blanc
8cl =1/3 cup vermouth
2-3 shallots
40cl= 6 tbsp thick sour cream
s&p
lemon or vinegar

Bonjour Dana, you made my day when you showed up in my notifications, it just took me a few days to get to you. it was so lovely to meet Emelyn, I have a question, I really do not like salmon, is there a fish comparable to salmon as a substitute. Hello thank you 😊 yes there is an excellent fish that I love , Trout ! You can also try it with a white fish like code . Tell me how it went , most important thing is that the fish won’t fall a part in the pan . Bon appétit !
