There is no way I could get my mouth around that “sandwich”, so I’d fill each side of the bell pepper equally with protein and veg then eat separately.

I took a huge green pepper and cut it into medium sized quarters. One I ate like a sandwich with lemon pepper tofu, horseradish cheddar, spinach and a roumelade with mayo, dill pickle mustard, and candied jalapeños. The second meal I made open face to use up the remaining tofu. Totally delicious.

That is honestly the most delicious looking sandwich I've ever seen. *gets in car and drives to grocery store to buy ingredients* Update: I made the sandwich and chicken salad and they were so good!

The bell pepper sandwiches seem like a great idea for a picnic or boat lunch because there is no bread to get soggy!

I made the pepper sandwich today and it was insanely good! I practically used everything you did but instead of cream cheese I used laughing cow triangles and wholegrain mustard in place of Dijon. I also added a small handful of bistro salad, a dash of balsamic and some french dressing. I honestly can’t believe how could it was. The cheddar, tomato onion and avocado worked really well with the chicken. . A bit of salt and pepper and voila. I used a red pepper as I didn’t have any green, maybe I’ll try a green one next time. Anyway, It will be on my menu forevermore. If you haven’t tried this people, please do. It tastes so much better than you can imagine. ❤

Tuna Bites Mix: canned tuna, homemade mayo, pickles, diced celery, green onions. Scoop mixture into baby bell peppers. Top with half a grape tomato & a pinch of grated cheese. -These are great for party platter snacks, or private munchies. Yum -You can also serve the mixture on sliced cucumbers, celery sticks, or wrapped in a lettuce leaf. If you use these other ideas, you can add diced bell pepper to the mixture for added crunch & flavor. - These have been a HUGE hit at our parties.

That is too much meat. I hope you are using low salt lunch meat. Sliced deli meat is high in sodium.

I made the first two, and they are DELICIOUS!! Especially loved the bell pepper sandwich. I used plain rotisserie chicken instead of sandwich meat. Cannot get over how good it is. I did not miss the bread, I actually prefer the bell pepper.

I made this tonight using an orange pepper. I don’t have any tomatoes so it was made with no tomatoes or dijon mustard. Also didn’t use as much deli meat… organic Turkey (not chicken). It was still so amazingly good and filling. Had about 5 radishes on the side with it. Oh yeah… this was amazingly good. Thanks for providing the recipe! This is going to be a regular lunch/dinner meal. So light and crisp. Perfect for summer or year round here in FL. I’m going to add fermented pickles or fermented dill kraut when my order of ferments comes in.
I deconstructed the pepper sandwich and topped with fresh Guac and pickles. Yum-o! Also added a few pepitas

The bell pepper is a delicious idea! I normally grill it with a filling of ground beef, topped with cheese 😁 I also swap out the mayo for Greek yoghurt when I do chicken mayo.

I make tuna with an Avocado instead of mayo some garlic sea salt and place it in a bell pepper and yummmy

I made the curry chicken salad and it’s excellent and very filling. You don’t even miss the bread. It’s a keeper!! 😊
These meals look great! For the "sandwich" bread, I use lettuce boats, and make them into roll ups because of a dietary restriction with peppers. The chicken salad is great paired with apple slices.

I LOVE Swedish rye crispbreads as a base for lunch. I use the leksands brand. It’s crunch and satisfying with only 8 g carbs per serving… some fiber, protein and iron. I too it with curry chicken salad and have some bell pepper and cucumber on the side. Perfect lunch!
There's nothing better than fast and light recipes especially in the summer season when it's hot outside :). I am more than positive that the first recipe is mouthwatering and delicious and to be fair we could fill the bell pepper with various other ingredients aka canned tuna in water or smoked salmon or boiled eggs.

What if your body doesn’t like dairy? I don’t eat many nuts so diary alternatives made with nuts are out too

@@loriallred4727 If you have a European food store near you, they have lots of options for spreads which would add the richness you'd be missing without the dairy. :)

I made the bell pepper sando today - very tasty! I used rotisserie chicken (4 oz) in a smallish green bell. As you work on stuffing pieces in each side, you do start to wonder how it will come together, but it fits! And it was super flavorful and satisfying. Will make again for sure. Thank you.

For lunch today I made egg and chicken salad. (Eggs from my hens) and wrapped it up with some big romaine lettuce leaves. They’re so crunchy and crispy. But I never thought to use peppers ! Wow. Looks so yummy !

I showed this to my husband thinking he would never like that type of sandwich but he was on board to try it. Yay!
I didn't think I 'd like the bell pepper sandwich as much as i did, I switched out the green pepper for a red pepper added pickles, cucumbers, honey turkey, cream cheese, 0 cal/0 sugar chipotle sauce and it was absolutely delicious. I loved the crunch of the pepper instead of bread which I've been cutting back on and almost ridding it from my diet completely so this was perfect thanks for the great ideas!

For the curry chicken salad in order for that to taste good you’re going to need to add some Garham masala, a little bit of salt a little bit of some kind of sweetener, like honey or sugar a little bit of coconut or coconut milk/cream would help as well, and some garlic powder at least if not sautéed garlic And you really should try pickling your red onions, big flavor boost, if you actually do like authentic curry then what you just made is not going to taste like curry. All of the stuff I said to add in there is not going to add many calories, but will greatly enhance the flavor also, if you have just a few minutes to bloom the spices, it’s going to be much better as well. Most of flavor comes from scent.

What's your thoughts on lunch meat? How healthy is it? My family bugs me about this all the time because of all the " chemicals." Also what your thoughts on eating too much protein more than your body needs? Does extra protein get stored as fat on the body?
