Third-generation master butcher Thomas Odermatt is the mastermind behind Roli Roti, a mobile gourmet rotisserie that’s been serving the Bay Area and beyond since 2002. Thomas’ humble concept is to serve high-quality rotisserie cooked meats like whole chicken and massive porchetta, a hand rolled pork tenderloin packed with spices and cooked until the skin is crisp. Roli Roti’s meat sandwiches and potatoes cooked with pork and chicken drippings have made him famous around San Francisco, and Thomas’ passion and spirit have kept the business going despite setbacks (like one food truck hijacking).

    I was a chef in a catering company in Oakland from 2004 to 2014. I've met this man and he's not pretending to be humble "he really is!!!!!!". But when he told the story of his first truck I gotta admit I didn't know it but he inspired a bunch of us back then and now inspires me more now. Love you bay area, we are stronger than we pretend not to be.

    Adolf Shekelberg “descending into chaos” the Bay Area has never been as peaceful as it is today. If you saw Oakland, SF, Richmond, Berkeley etc 10-20 yrs ago, the amount of violent crime was staggering and you can see it from the property values then. Not to mention the crack epidemic in the 80s. Only newcomers or people with amnesia think the Bay Area is dangerous.

    @@Valquill No I'm Swiss and the people in the Italian speaking part have a much different accent. His first language is Swissgerman. But since Italy is so close we usually know how to pronounce stuff like that, very few Swissgerman speaking people actually speak Italian though.

    I see these folks every week at the farmers markets, I don’t eat a lot of meat, but their porchetta sandwich is phenomenal. It’s got an excellent contrast of crispy, juicy pork and sweet onion jam.

    Seriously ... he always has lines. I've been to 3 different locations and there is always a line and it's so worth the wait. The meats are so flavorful and his potatoes are out of this world delicious. If you are ever in SF, definitely check him out at the Ferry Building at Saturday's Farmer's Market.

    6:03 I really really admire the chefs who tell their own recipes in all honesty without any fluff or things like "our own secret rub". This guy is such a great and humble person and it shows that just from his personality itself.     Authentic Italian porchetta is amazingly succulent and flavorful, and the way he soaks up the juice from the pork onto the ciabatta bread only then to top it with onion marmalade and arugula makes me want to fly out to to try that. Excellent job!

    Totally legit food. The potatoes with all the dripping are amazing. You just need a little salt on that and that's it. The only downside is the lines are super long.

    One of the first ones where I've seen the guy just tell you exactly what seasoning he's using not oh it's a secret I can't tell you everything , which is super cool , my flatmate nonna used to make porchetta and send it over at Xmas and he would share with me and it was amazing 😍

    I think a food truck would be the only way I'd get into owning my own business. Seems like you get to choose what hours to operate and mobility makes it to where you can test out different locations to maximize your profits!

    I'd say you get in, get in only if you're passionate about your food and what you cook. Cause else itll be like a chore for you. Take it from me I used to work at a 5 star restaurant just for bucks but didnt had any liberty, now that I have my own cafe I'm more than happy and content

    I'm so excited and so proud to say that I'm a Native San Franciscan born and raised in this beautiful city and yes the sandwiches are to-die-for the line is long but it's so worth it and I'm going this weekend to the farmer's market because things are getting better with Covid 19,-So now its the best time to eat well & continue to be happy safe and Full of porketa!!!!!

    Thursday’s at UN Plaza on Market untill 3 in SF Saturday and Sunday at Lake Merritt in Oakland. Mess wit it he fire.

    I live in Los Angeles, I have been to SF numerous times and EVERY time I've gone I have made time for the Porchetta sandwich. I haven't been in about 3 years and I miss it to this day! I would go to SF at this point just for that sandwich. It is amazing and to anyone going I highly suggest it! Also can't forget the potatoes!

    I was a chef in SF 2005-2015 and would eat Thomas' food while shopping the farmer's market. He is a true artisan and his food is exceptional!!!

    No Brasil, mas digo especificamente em São Paulo, o frango assado é algo muito comum. É encontrando quase em toda as cidade e é consumido principalmente aos sábados e domingos. Já a panceta (porchetta) é um item também muito consumido principalmente nos churrascos. Parabéns pela reportagem.     Every block in Mexico has its own rotisserie , instead of porchetta they usually have pork ribs and yeah those potatoes that have been soaking all the juices that drip down are freaking insane jajaj
