The MUNCHIES Guide to Wales

Best known for unpronounceable town names, Tom Jones, and a sheep population that outnumbers its citizens, Wales isn’t often thought of for its food.
But in the MUNCHIES Guide to Wales, we discover a culinary culture that goes beyond leeks and Welsh rarebit. And with many campaigning to name 2018 the official “Year of Welsh Food and Drink,” word on the valley is that local cuisine is about to get even more exciting.
As host Charlet Duboc embarks on a Welsh food odyssey, it certainly seems that way. From tweeting farmers and foraging chefs to Welsh sushi (“Wushi”) and baked bean museums, could Wales be the UK’s best kept food secret?

    That guy at the end was the embodiment of mysterious, at first I though "weird" or "strange" but after seeing the way he talked, connected and respected the forest, not to mention his massive effortless genius, had my mouth watering. He was so soothing and relaxing, his work was too beautiful. Like an absolute master at his art, and that's what it was, fuckin' art. I'm glad I came across this.

    It's foraging, not scavenging. Scavenging entails eating the rotting remains of another animal's kill or left over trash that someone else was done with. Foraging is the practice of harvesting wild plants and herbs to cook with. Huge difference.

    The guy at the end was a true artist. I kinda feel sorry for him. He gives me the impression of someone who's seen too much and want to escape his horror. His food and way of living was really impressive to see. Never seen anything like that!

Theres this story about a guy in scandiniva who went into the woods at some point & the owner saw that he'd take care of it & let him live there, even got himself a woman to share lateron. I really envy these stories!

    Yeah the host did kinda hint at the start that he was at the top at some point so it is easy to imagine him being completely burned out by that intense environment in a Michelin star restaurant and retreating back to basics for peace of mind. Amazing to see a master at work like that though, hope he's doing ok.

    Initially I thought the "hermit" cook was weird and withdrawn but then I realised, that maybe that's what people are really like when they're entirely at ease and peace with themselves. We live in such a fast-paced world where people are loud and manic, that it never dawned on me that maybe that's what it should be like. What appears weird is actually so right.

    The very last gentleman, he was so at peace with himself. At first I wondered what was going on, but you could see as the interview went on the guy became more comfortable with the people in the crew so he opened up and spoke with Charlet. His cooking & plating were absolutely amazing, especially in a tent. So wonderful to have seen Matt in this video, Great job Charlet. Thank you for sharing your trip with us.

    Wales is a tiny, weird and wonderful country with some of the most eccentric and down-to-earth people you'll ever meet. This video encapsulates its oddness. The final section with the forager-chef is priceless. At first you think he might be a bit simple, then you find out that he is actually a mysterious genius who can conjure up culinary magic. What a man!

    The last 10 minutes of this video were absolutely beautiful. That's the wonderful thing about humanity. For all our aggregated flaws as a species - self-awareness and individualism that comes from it yields gems like Matt Powell. And they're scattered all over the place, all over the world. Finding them, or encountering them is so special. Thanks to Munchies, the producers, camera team and Charlet for bringing this guy into our lives for 10 minutes. It reminded me that nothing beats quiet but intense passion and focus. Bravo.

    I guess Mark had a bit of a moment that made him want to step back from the stress of the restaurant scene and I admire him for the way he's done it. Charlet put across so perfectly the feeling of experiencing something for the first time, with no reference point and preconceptions of what you're about to feel. Another fantastic piece of film making.

    In any other Nothern European country, the guy in the tent would be running a 3-Michelin-Star restaurant with a 9-month waiting list. In Wales, he's cooking similar quality food in a tent, slightly spaced-out and a bit in awe of Charlet (as are most of us).

    I speculate that he used to be a Michelin-Starred chef, cooking nouvelle cuisine during the 1980s and 1990s, but then suffered major trauma and got burned out from the restaurant industry, possibly a divorce as well. He might have spent some time in a mental hospital- we don't know. It seems he's found a way to deal with his trauma by living in isolation off the electricity grid, foraging from the forest and cooking up great food for himself and those who visit him. I'm honoured to see this video of him and his culinary creations.

    What an amazing, fascinating episode. The farming family and that man foraging in the woods only to produce a wonderful smorgasbords of delicacies. I am fortunate enough to live on the border of Wales and I'll definitely be taking more interest in Welsh cuisine!
