Birria quesa tacos recipe
3.3 or 3.5 lbs of beef short ribs
8 ea guajillo chiles (chilis)
4 ea puya chiles
2 ea (1/2 lb) roma tomatoes
1/2 medium onion, yellow
3 ea garlic, cloves
1/2 tsp cumin, whole
1/4 tsp black pepper
1/2 tsp Mexican oregano
1 tsp white vinegar
2 tsp salt
3 ea small mint leafs or Hierbabuena
1 ea bay leaf
11 cups of water
*Adjust salt to taste at the end.
*If you need additional water to puree ingredients well you can add some more.

This is absolutely outstanding. Producing this type of cooking liquid, a consommé, to dip and cook the taco shell in is outstanding. When you took the scum out with the ladle, the quality of the liquid looked incredible. This is what professionals do. Congratulations and thank you. This is something out of the textbook.

Love to see this! The variations compared to a family recipe for birria are intriguing that I am going to try. We love to serve the consume with some of the meat with raw cabbage, onion, cilantro, and a squeeze of lime. Along with the tacos of course! It is such a versatile dish.

I went to a food truck today and got my first Birria tacos. I’m so glad I watched this video first because by the time I got home, the tacos weren’t crispy anymore. So I heated up a skillet and when it was hot, I put the tacos on. They got nice and crispy and it made a HUGE difference in flavor and enjoyment. I could tell the food truck used beef chuck. I’m going to make Birria myself and use your recipe with short ribs and I just know it will be phenomenal. I’m so excited to try it!! I thank you and my husband does too - he *loves* the food I make with your recipes.

I made these this weekend and this recipe is awesome! Rosana is legit! My grocer didn't have short ribs, so I used a chuck roast that had a lot of marbling and fat. Soooo good. I also made Rosana's recipe for Tomatillo Salsa and wow! What a pairing. Some people work at matching a wine to a dinner, but I work at matching the right salsa to the meal. This was perfection, especially with the lime wedge, it really brings out the flavor. Thank you Rosana. You are a fantastic cook!

You have such a nice voice. Very relaxing.
Chuck roast works well for this too, and it's on sale frequently. I like to roast the tomatoes and onions, then put into a Ninja blender with water and the other ingredients. No need to strain it as the Ninja liquifies it completely.
Hands down on the greatest tasting dishes on the planet. I hope everyone gets to try these. Super addictive. It makes you want to continue eating even after being full.

I have had beef, goat and lamb Burria, I decided to try it with whole chicken thighs since me and son love chicken tacos, the fat released by the chicken mixed with consommé was great…
I recently discovered Birria tacos at a local place in Texas. OMG they made my life different. I am now infatuated with Birria and Quesabirria tacos. Its like barbacoa, tacos, and French dip sandwiches had a delicious spicy, beefy baby. Great video, you looked so happy eating your birria tacos. Thanks and subbed!
