This is the most famous cabbage recipe in china. Baocai (包菜) is cabbage, Shousi (手撕) means torn by hand. This is literally just stir fry cabbage but it is so basic and popular that if you ask any Chinese, they will know about this dish, period.

INGREDIENTS
- 1.4 lb (640 grams) of cabbage, torn by hand
- 1.5 tbsp of Chinese black vinegar (Amazon Link - geni.us/LbEO)
- 8-10 pieces of dry chilies, seeded and cut in half (Amazon Link - geni.us/coMV)
- 4 cloves of garlic, sliced thinly
- 1 tsp of salt or to taste
- 2 tsp of soy sauce (Amazon Link - geni.us/sTa6Ep)
- 2-3 tbsp of vegetable oil to stir fry
INSTRUCTIONS
Heat up your wok and add the vegetable oil. Toss in the cabbage along with the garlic and dried chilies. Stir over high heat for a few minutes to get some nice char. It will taste like roasted cabbage.
Add soy sauce, salt, and 1 tbsp of the Chinese black vinegar. Stir for a minute. Turn off the heat. Before serving, add the remaining black vinegar and mix thoroughly. This will stabilize the flavor Because the vinegar we add before evaporated a little bit during cooking.

    One of my favorite things about China is walking into a 'buffet style' restraunt at about 11 oclock am.The windows are steamy, food is fresh,and you beat the lunch crowd.This dish is a must.

    leftover taters and brussels sprouts fried up till it gets a brown crust, that’s what we called bubble and squeak, with fried eggs flopped on top

    @@CrimeVid yeah, i've seen a lot of versions. in the UK its generally roast beef leftovers, which involves potatoes. but fried cabbage and meat as far as I can tell is where the term originated. As a matter of fact, if you do fry just cabbage and sausage (I think originally it was beef or any type of minced meat), you get that distinct bubble and squeak sound. The dish was named for the sound it makes while making it. You will not get that with potatoes added. What you have is delicious, but if it doesn't make the sound while cooking, its not bubble and squeak.

    You can make a vegetarian version with minced mushrooms standing in for the sausage, but these days plant-based sausages are so good I use them now. You just can’t cook the cabbage and potatoes in lard if you are serving vegetarians, which is unfortunate since it adds so much flavor and gives the vegetables nice crispy and brown edges.

    I would go to Chinese restaurants with my friends from Shanghai. They would order all sorts of stuff off-menu, but, by far, the best thing they ordered imo was stir fry cabbage. I would ask for them to order it every time.

    YUMMY! when I dont feel well, I steam torn cabbage and eat with red wine vinegar. Its my fave. Def gonna try this. And I live in the middle of nowhere and have been on the hunt for black vinegar, thank you so much for saying that balsamic is an OK alternative. :)

    I love fried cabbage, haven't tried frying it this way, I lived in China for many years and cook it with chillis, sichuan pepper, garlic and pieces of flank pork on high heat, then add all the cabbage teared exactly the same way as you did, then after about a minute add oyster sauce and serve it in same texture as you did, also very nice, love it!

    I love cabbage, too! I have only used standard American round cabbage, cut in wedges and steamed in about 2" of water (with a little nutmeg grated over the top) until tender when pierced with a knife. So sweet and nutty, just delicious. I'll try this way soon with your special Asian cabbage. Love your videos!

    My family and I love stir fry cabbage, it’s homey and filling. I’ve never tried the black vinegar, I will add this to my list. We usually do a tad bit of grape seed oil, onion, garlic, carrots, and amino liquids. Delicious thanks for sharing.

    oh wow, this looks so good, I love cabbage. I grow a Savoy type in my garden, but I've used it all up, so excited to make this tonight with just the standard grocery cabbage! Also, I love all types of vinegars and black vinegar is my main go to for cooking but for salads, it's either champagne or Moscato wine vinegar. The explanation and comparison between the two-body shape were enlightening for me, because I've seen the "flat" type cabbage in Chinatown before and thought they were "rejects" from the cabbage patch!     I love fried cabbage, with or without meat and/or potatoes, fried in bacon grease! So good! Sometimes I add sliced onion and make it all together to make a meal! 💕

    Oh I need to try this! I am like this with taboulleh salad, it’s just a simple blend of stuff but man I could eat it for every meal if necessary. With the right components, a single vegetable can be a fantastic dish. This looks absolutely like one of them!

    Stir fried cabbage is so easy, flavorful and pairs well with other vegetables or proteins. I love Napa with its more crinkled leaves with dried or fresh shrimp or occasionally will pair with smoked sausage pieces nor friend shrimp. I often have raw cabbage with heavier dishes since it serves as a sweet digestive and cleansing compliment. Cabbage and all its versatility for fine dishes is highly underrated in US.

    Seems every culture has a comfort food cabbage recipe. I’m Polish/Hungarian and we have Haluski (cabbage & noodles) and it is an all-time favorite.

    Without knowing this recipe, I improvised it the other day. I only had a cabbage and garlic in my fridge so I decided to stir fry the cabbage and eat it with some rice. It turned out delicious! I didnt tear it by hand however, because ofc I didn't know about that :) besides, my cabbage was of the dense kind. There's something so delicious about stir fried cabbage. It's much much tastier than raw or boiled, like my family does. I thought I didn't like cabbage but now it's one of my favourite vegetables!

    used to love stir fried lettuce when I lived in Tianjin China. Soy sauce, Oyster sauce, ginger and garlic. this looks similar.
