Delicacy? Kakiage are a staple of supermarket prepared goods sections. They're delicious, sure, but not so specialized. By the way, the ones with sakura ebi (sakura shrimp) are fun ... try them in Shizuoka.

Many high end Tempura restaurants utilize a blend of Canola oil and refined Sesame oil.

@@eatlikealocal Perhaps the dark color comes from sesame? Most refined oils used for frying are nearly colorless to light amber.
