Actually this episode's owner was one of the most wholesome and willing to take criticism from Chef Ramsay. It was just his wife who was such a Karen and actually got scolded by Ramsay in the middle of the episode. However- i don't wanna ever see a pizza and sushi together in any context, not even a drawing.

As a sushi chef I can say that some fish has to be freeze in order to consume raw , specially salmon but it’s up to the chef to serve it right or wrong

This honestly the saddest episode of Kitchen Nightmares US ever. The owner, the Japanese man, who used to be the head chef lost his passion of cooking because the business is going down and he's just walking around and check everything. The restaurant is also struggling with limited equipment and ingredients. The owner couldn't speak up anymore. Meanwhile, his wife, an American woman wasn't supporting him and just torturing him by bullying him. And she didn't do anything to fix the restaurant but she kept calling her husband lazy. She was also trying so hard to get Chef Ramsay's attention but Chef Ramsay didn't care. While their kids were genuinely worried about him and even the eldest son always used his bank account for the restaurant. Finally, the man got his spirit back after his family telling their feeling that they wanted to support him. Once he got back to cook, his wife was standing and grumpy like she wanted to see him fail forever! What a bitch!

1:35 ... All sushi (in the USA at least) MUST be frozen by law. It is then thawed and served. This is to kill off parasites, etc.. If you eat legal sushi in the USA, it WAS FROZEN at one time.

In our country, that sushi pizza is very popular, but we call it baked sushi. It's made with the same ingredients as said in the videos and it delicious actually. Once cooked, you take a slice and wrap it in nori.

I’m a pizza lover while my brother is both a sushi and pizza lover, and he & I both agree that THAT is the ultimate insult to those two foods 🤬

I want to give Gordon Ramsay a "rice burger". A dish of meat and fish sandwiched between rice instead of bread. It was a kind of heretical food in Japan, but it has become a staple now. It's pretty delicious.

I'm really confused why he's freaking out about the salmon being frozen. Salmon can contain bacteria and parasites that need to be killed by deep freezing at like -20C to make it safe to eat raw. Were they preparing the sashima and then re-freezing it maybe? Also, the sushi pizza is an abomination because sushi's natural burrito form is already more convenient than pizza.

Its just the Parasites that freezing kills, bacteria isn't really a concern unless you are immune compromised, and yes the FDA regulates in the US that all fish to be served raw for any reason must be frozen first.

Salmon has to be flash frozen, if is slow frozen taste and texture will be destroyed. This is presumably what Gordon detected.

@@jamesflames6987 method of killing the fish has by FAR the largest effect. Killing a fish ikejime and bleeding it properly will rid the fish of any “fishy” taste or mushy texture.

If you order fish for a restaurant it will often be assumed that you're preparing it immediately, so the trucks will be refrigerated instead of keeping the fish frozen, which will thaw it. If you refreeze it after it will lose quality. I do wish they were more specific though, because this could lead people to believe that frozen fish is inherently bad when if it's flash frozen right out of the water it's totally fine.
