Massimo Bottura is a really cool person. It has many side projects to provide food for people that can't afford it like the "Refettorio Ambrosiano" in collaboration with Caritas, and it has been a promoter of food efficiency, In the fight against food waste, he gives public seminars in which he explains how to apply simplicity and economy to cooking. His most important project is called "Food for Soul", an ONG that promotes these values.

Yeah, other than making a job and being paid for cooking food, a chef or someone that cooks as profession have always the same objective: feed people. And by extension, if he cooks well, he makes others feel better. After a while you can see that people grows and behave better if they have their belly full and they are happy. Quality of civilization is based on the fact that we humans needs to satisfy our basic needs before doing everything else, or the result of our work will just be bad. Instead, once one have eaten something, that is also good and satisfying, then you can expect him to do good things. From the little ones to the biggest.

As a visual artist there is a respect for materiality, for technique, for the visual experience, and the stories they tell; the parallels in cooking here are fascinating. It is evident that this man has been doing this for a long time, the mastery of textures, tastes, aromas, and the proper treatment of the ingredients and how to artfully break the rules is very interesting. It is not just the flavors but the story, the expertise here in being able to "play" with the ingredients to wrap them around a story shows he is a master in his craft. cool stuff.

I think at the beginning Massimo Bottura was very serious because he didn't want two youtubers to turn something so important for him into a joke. Not knowing them he could actually think they were the kind of youtuber who just messes around for likes. Even more so after the panettone in wine scene. But then he proved to be very empathetic and kind enough to ask the cameramen if they would like to eat something.

13:22 As an Italian, I have to say that this made me tear up. We live such a division, especially between the south and the north. I was born in the north of Italy, but my family is mostly from the south. I have really deep roots from Naples but I'm from Milan, and I always felt like I don't belong anywhere, even if it's the same country. To hear an Italian trying to escape the norm of an identity solely based on his little town of birth and actually trying to unite the country through food, so passionately and believing so strongly in an Italian identity, it really made me emotional. We could be so much more, so much stronger, if only we could surpass the divide that we in the first place make. The union of many amazing regional things can only make a much better national result. The only limit are ourselves. I'm so happy you decided to create this series, Josh and Ollie. Seeing people genuinely amazed of the best Italy can offer really makes me proud of my country, even through all our flaws. 💜

As a non Italian, it was not clear to me what he meant here until I read your comment. I have a completely different understanding of what he means now, very beautiful message, thank you for sharing.

Thank you so much for sharing Alessia. I experienced a similar struggle as a Canadian all my life. I visited a lot of places in Italy in my life, from Milan to Palermo, and for me Italy will always remain one of the most beautiful countries in the world, because of how proud of who you are and of your culture, and how incredibly capable and creative you are at making so many great things. I think I have visited Italy enough to understand what you're saying though. Of course there are differences between the north and the south, it's palpable even as a tourist. The way you expressed it is just absolutely amazing. You really seem to have a truly beautiful heart Alessia. I'm profoundly happy that you guys elected that fabulous woman from Rome a couple of weeks ago. I truly think Giorgia Meloni is the proper person to unite your beautiful and strong country back to what it should be. She seems to be a diamond in the rough. I can only dream of having such a great prime minister, unfortunately we have the most corrupt crime minister our country has ever been plagued with, but so many of us still have high hopes we will also be able to have our Giorgia very soon. Take care and never stop believing in your beautiful culture, despite all these toxic globalist evil threats that only exist to render all of us generic powerless slaves. I have the greatest respect and admiration for you Italians. Never stop being so beautiful and passionate, you are the example we should all follow.

That was Massimo Bottura. And he...fed Josh. Any hardship you might've endured during the filming of this trip has to be worth it. That man is a treasure of gastronomy, showing that you can be warm and personable, despite being arguably the best chef in the world.

When Ollie said that the pasta was the best he has ever had, it really hit me. For Josh, almost everything he eats he says it's the best he's had, but Ollie doesn't really say that. Glad you guys enjoyed the meal! Thanks for sharing.

i feel the same way too. i've been following their content since few years ago just a little while before the pandemic hits, and i've got to say at first i genuinely thought that josh is the more sensible person while ollie is in charge of making the video entertaining for us viewers. however after a while i started to notice what u said and it hits me that it might be ollie that actually cares more about commenting on the food while josh just.. say everything is the best and feels very scripted even though he's being genuine about it

I like that the chef mentioning his passion "like a kid". We all need an inner kid that inspires and allows our imagination to run free. Helps me as an artist to view the world in the eyes of a kid... it makes your creation more pure
