    The best mint sauce I've seen on youtube! So many others just use vinegar and water with no oil but it comes way too thin instead of like a sauce. The oil really gives it great consistency and I like the mortar and pestle idea to bring out the mint juice. Great simple recipe!

    Ravensbourne, huh? I started school there, 1952. Ask your mum if she recalls Mr Parsons, the grocer. Our old house at Maia is still there, same colour and unaltered - lovely rhododendron tree also. Nice mint grew there as well as gooseberry and currant bushes. Now as far north as that was south. Thanks for the mint sauce hint.

    Thank you for this ❤️❤️❤️ Mint has taken over my garden bed so this should help take care of SOME of it haha. I’m also super homesick at the moment (I’m living in Melbourne) and it was so refreshing hearing the accent 🥲❤️

    I've had mint in the yard for years, but was always disappointed with mint sauces made in the food processor. They would smell great would taste more like spinach than mint- not great. Then I tried this recipe- fantastic! Really is next level.

    This looks great, I made it twice last week. My own way. Chopped I don’t have a mortar and pestle need to get one, but I loved the addition of olive oil here, which I use a lot. I like you only put a pinch or two of sugar in, as some other recipes on here use far too much. I used White malt vinegar in mine.

    lol, My Grandmother wouldn't let me move out without having a pestle and mortar among other things she said I was an essential item. She also refused to let me leave until I learned how to cook - never understood it until now.

    Thanks. I'll let you know how mine came out. I always chomp on a few raw leaves to remind myself that not everything in the world is processed. Besides, it's quite a treat of nature right up there with cinnamon. .

    Do you need to make it fresh every time or can you store it in the fridge? I ask cause I have lots of fresh mint now but won't have any later.

    Yes, you can freeze the mint sauce. I freeze mine in ice cube trays. When frozen I take out the cubes and store them in a freezer bag.
