You never cease to amaze! I love this, particularly because it's been a decade since I was in Italia...(my heritage on all sides!) and I LOVE the people, the food, and the feel of the place. Your visit brought me back (and made me yearn for a taste)! Thanks, Jamie. You're the BEST!
Jamie! You are right it is the best bread in Puglia!
Jamie, what a great experience!!!!
love your smart handling every where & oh your dishes
Looks sooo good!
I am sooo doing this today. It's rainy out and I have not made Foccacia in years. I am sure mine will not be near as tasty as in the video, but I am inspired to collect some fresh spring water to see if it changes the outcome of the bread. :)))

It's the same kind of stove they use in Arabia to bake Manaqeesh, ( Zaatar/ Arabian Thyme bread or cheese bread) This kind of stove is referred to as Tanour تنور in Arabic.
Yea I'm so gonna go to Lidl tomorrow and start ripping some loafs apart
Square toast and sandwich bread manufacturers will hire an assassin for showing the people of England "real" bread.

What is the natural yeast exactly made of? is it like a firm sourdough starter or just a giant block of yeast?
@angelorso969
7 жыл бұрын
It's simply the day before dough, in italy it's colled biga. you can do it making a litle doug the day befor you want prepare bread, and it requires a longer rising time
Best focaccia in Italy!

Where is that little bakery??
Temperature checking with bread ... they do a similar thing in france but make à fougasse to do it Some guys do it by throwing a handful of flour into the oven and seeing if it burns Art form
mmmm bread

Jamie what is the natural yeast he is talking about? can we get it here in the states?
Much respect for you Jamie: when you speak about Italian food you mean it: you learned the hard way
How do you get that natural yeast?
Al Pacino?
we all like making different kinds of bread~ Turkish bread or Italian bread, or even dutch bread has there beautiful limits~ but home made is like farther love, a strong feeling of making others comfortable for warm bread~ for early in the morning is warm bread a nice touch of comfort~
Is natural yeast like reserving a bit of yogurt as a starter? To the Google!
torna in italia per i tuoi 40 anni e fai di nuovo il giro vieni a casa mia e cucina con me e mia mamma......jamie come back to italy for ur 40th come to my place and cook with me and my mum, it would be fantastic.....
Surely there is a simpler way to know your bread is good!
Does there anybody think that guy in the video looks like Al Pacino or Michael Corleone? handsome dude.
Ooooooh MY MY ;)
Jamie come in emilia romagna! modena bologna and so on, you will reach heaven on earth.
If you're open to new business ideas, how about opening proper bakeries across the UK! So hard to find #realbread outside of London.
Wow. That is one hell of a wood-fired oven. Puts ours to shame, but our wings were pretty good...Sticky smoked-beer chicken wings
Italian food. In the end all that matters
Borat is teaching jamie how to cook
Jamie, what can I cook while in uni if i dont have pots and pans? lol real question btw
@wqw888

get pots and pans and live off of ramen actually don't since ramen has a buttload of msg and that probably won't be safe for you to eat it everyday
@ratznefumel

you can get microwave with options of an oven. you can cook great things with an oven and microwave. like lasagna. or example just look up recepies with it.
@HuggyBearx64
10 жыл бұрын
Well you could make this bread. All you need is a big bowl to mix the dough and some spare bricks and wood for an oven. Flour, yeast, salt, water, done.

benito cheguevara normal yes, but high hydration? No. 75% is starting to get wet, I tend to work with dough at 80% and above. 90% and above when working with wholegrain doughs
More salt so more money wow,
Every great Bakery-chain ripped some dough of from Altamura …

@simonj48

***** and for the dough to take on about 65% water.
@sukumvit
10 жыл бұрын
Flour 1 part, water 0.65 parts, salt 0.02 parts. Thus for 1kg flour, use 650ml water and 20 grams of salt. Yeast you'll just have to get what you can and use the amount recommended. By "natural yeast" I'd say they probably have their own sourdough starter that has been kept by the bakery for a long time...

the dough is different, it's more watery and spongy. focaccia is a dish we usually make at home in normal ovens
Almost as good as Nicolas Supiot's bread

Salt in bread in italy?
@Teenar99
9 жыл бұрын
Yup, only in Tuscany they don't put salt in bread
He didn't eat it.
hahaha his intonations are like Borat's
Looks like Al Pacino. Sounds like Borat.
I don't understand why they should tell their recipe if now everybody can make it and harm their business.
@Mike-km2ct

Because it's a very simple recipe, and the reason the bread is good is because of the technique and ingredients?
Looks burnt to me..
Jamie i hate to tell you but its burned
Nah pandesal is much better
The guy is good baker, but why so cocky?? PATHETIC
Focaccia bread that's burnt beyond recognition
Yo why this baker look like he gonna make you kiss his ring on the day of his daughter's wedding?
