Nowhere is the art of cheese making more multifaceted than it is in France. There you’ll find both countless different varieties of cheese, as well as a myriad of ‘maitre fromager affineur’ - the master cheese makers who create them. In France it is a calling unto itself, one which Bernard Antony, from the small village of Vieux-Ferrette, has perfected - he’s one of the best in his field.

    I spent a lot of time in cheese shops during my 3 years in Germany. Of course I went to France and Italy as well. The difference using raw milk makes is unbelievable! To bad we can't use that here in the USA

    @@nickf8028 As I understood, using Raw Milk in cheese within the USA is illegal. I suppose I could be wrong though, I'm no cheese Nazi.

    @Theodore Cossitt Raw milk products are allowed in many states within the US - They are prohibited in Australia or Canada for example.

    You can make cheese from raw milk in the US. It just has to be ripened over a certain period. 60 days I think is the FDA requirement.

    You really see in two generations the alsatian dialect waning, the father speaks german with a clear alsatian dialect, half suebian, half swiss german, the son speaks high german with a strong french accent.. Sad but this happens to all dialects and minority languages now....

    There is nothing "now" about this, language has always and will always change, being fluid is its natural state

    @@Kae-Lexi Actually, it's different now than in the past. The world is more connected, the media bring a high degree of standardization. Yes, languages always changed and never kept themselves isolated, but dialects were surviving for centuries and NOW they're disappearing.

    @@cioccolateriaveneziana Better go back to the invention of the printing press, the translation of the bible from latin and also stop the napoleonic wars and change the course of history to stop all those century old dialects from disappearing. The world changes, media revolutions have been around for a while, this changes nothing, it just accelerates it. Nothing is being lost by more people understanding each other. Language changes because it is more convenient, because people perceive it that way because they have to speak it every day in a connected world.

    @@Kae-Lexi The existence of dialects has no role whatsover in the lack of understanding between communities. Nowadays, if someone speaks a dialect, they also speak a standard language ("diglossia"). So, people do have the tools to understand each other - dialects don't have to die for that.

    I think the best type of cheese is soft cheeses with red mould that smell worse than my feet. Unfortunately nobody in my country like that kind so I only get to eat them when I travel.

    Strange how if one was serving their king they would be killing an enemy. Sure Ottoman Bismarck defeated Napoleon III but still feels weird killing common people for the kings purpose. Instead of eating cheese and chill out, the emperor and the lords surrounding him instigate affliction. I'm pretty sure Napoleon III started it. Nonetheless the world is UROBOROS albeit it doesn't have to be that way at all.

    @@user-yx5pd7yi8o Nicht die gleiche Situation. Königsberg ist ein historischer Name. Man würde auch heute von "Königsberg" sprechen, wenn man im Kontext der Geschichte vor 1945 ist. Man würde nicht sagen, dass Immanuel Kant in "Kaliningrad" lebte. Mit Elsass/Alsace usw. ist es eine andere Frage. Elsass ist das deutsche Exonym für das Land, Alsace ist das französische Endonym. (Vor hundert Jahren war das umgekehrt.) Man kann es vergleichen mit Köln/Cologne oder mit Venedig/Venezia oder Wien/Vienna.

    They are from Alsace, a German-speaking area of France. They speak the Elsasserditsch dialect.

    Nah trust me. It can smell like dirty feets but taste great, we have so many different kinds. What upsets my stomach is maggots, flies love cheese and once upon a time people didnt have much food and would eat the maggots aswel.

    @Manu ad Ferrum You probably refer to the Sardinian cheese "Casu Martzu", a traditional Sardinian sheep milk cheese that contains live insect larvae. It is actually considered a delicacy among true cheese lovers.....😧😉

    It is Elsass (Alsace), a region on the border of france-germany, they speak and understand both languages.

    Which one? One can hardly argue that the family of several dozens British cheeses is "better" than the family of several hundreds French cheeses (regardless the number). How can an extremely diverse group be - as a whole - "better" than another extremely diverse group?

    France already wins with the Roquefort Cheese alone. No offense, Britain has fantastic cheese and a great diversity and also a long history of cheese making but France is the Winner! There is no where such a variety and such a high quality of cheese like in France. Italy comes close second.
